Amish Breakfast Casserole

Ingredients:
* 1 lb breakfast sausage (pork or turkey)
* 1 small onion, diced
* 3 cups frozen southern style hash browns (thawed)
* 1½ cups shredded cheddar cheese
* 1½ cups shredded mozzarella cheese
* 6 large eggs
* 1 cup cottage cheese
* ½ tsp garlic powder
* ½ tsp black pepper
* ¼ tsp salt (optional, depending on your sausage)

Directions:
1. Preheat oven to 350°F (175°C). Grease a 9x13” casserole dish.
2. Cook sausage and diced onion in a skillet over medium heat until browned. Drain excess grease.
3. In a large bowl, whisk together the eggs, cottage cheese, garlic powder, pepper, and salt.
4. Add in the hash browns, cooked sausage mixture, egg/cottage cheese mixture, and both cheeses into baking dish. Mix well.
5. Bake uncovered for 40–45 minutes, or until the center is set and the top is golden brown.
6. Let rest 5 minutes before serving.
