A couple of years ago, I was on an herbal podcast hosted by John Gallagher and he suggested that I try doing a miso using Schisandra berries. John was always someone I highly respected and it was his website (herbmentor.com) that I got me into herbalism in the first place. Anyway, John passed away last year and I wanted to dedicate this miso to him. Schisandra berries are known as the 5 flavored fruit because they are sweet, sour, bitter, salty and pungent. Medicinally they are adaptogenic (used to regulate stress), great for the heart and liver, enhance cognitive function and even boost our stamina. They’ve long been one of my favorite plants to grow and I’ve even had a vine in my garden that’s over a decade old. This flavor of this miso is probably the most unique of all the misos I’ve ever made and when you try it, your taste buds go on a crazy journey of all 5 flavors in succession. I’ve been calling it the everlasting gobstopper miso. Thanks for the suggestion John and this one’s for you.

I’ll be teaching my third miso making workshop at the downtown Bellingham Co-op on Tuesday, May 5 from 6:30-9pm. I’ll be covering the history of miso, its myriad of health benefits and how it’s used in cuisines around the world. We’ll actually make a black bean miso in class and each student will get to take a quart jar of it home to ferment for 10 months. We’ll end the class by sampling 4 different miso inspired dishes to show you how easily it can transform almost any meal. I guarantee you’ll get your money’s worth and then some. We’ll be at the farmer’s market tomorrow in Twisp from 9am-12pm. Misos are $12 each or 2 for $20 and bottles of pink bean shoyu are $8 each. Some of the misos we’ll have available are pink bean and nettle, black bean and elderflower, adzuki bean and lemon balm, red lentil and porcini, pink bean and beet and rose petal. FREE SAMPLES!!!
