We start with smoky charred eggplant purée as the base, then layer in fire-roasted heirloom tomatoes, charred garden peppers, spicy lamb sausage, salty ricotta salata, fresh parsley, and plenty of za’atar.

Smoky. Spicy. Bright. A little funky. Loaded with Middle Eastern-inspired flavors that’ll keep you guessing with every bite.

Today we’re celebrating ONE YEAR of Sam at Pop-Start Pizza! 🎉🍕

So naturally, we made a pie for the occasion.

This one starts with Sam and his mom’s go-to pizza combo: sausage, olives & mushrooms.

He took their classic order and “jazzed” it up Pop-Start style with spicy tomato sauce, creamy stracciatella, fried garlic, black pepper, and a little aged balsamic to finish it off.

And the name goes a little deeper than just dressing up an old-school pizza combo. Chicago happens to be Sam and his mom’s favorite musical — so All That Jazz felt pretty damn perfect.

Sam’s been rocking with us for a full year now, and we’re lucky to have him as part of this weird little pizza crew.

Much like its namesake, this pie might look like a modest Spaniard — but there’s some serious precision behind the simplicity.

Locally grown heirloom tomatoes from Garden of Eaton create a fresh, bright tomato base, while smoky pimentón, speck prosciutto, garlic, thyme, and good olive oil do the rest.

Our riff on one of Spain’s simplest and most delicious tapas: pan con tomate — literally, tomato with bread.

No need to overthink it. Great tomatoes. Great crust. A few good ingredients. Done right.

Close your eyes, pretend you’re sitting somewhere in Spain, and pair it with a cold glass of Rabble Rosé.
