I have tons of new faces on here since the birth of my third baby 3+ months ago! So it’s time for another introductory post.
Hi! My name is Jessica Isbell, known by friends and family as Jessie (please do not call me Jess haha).
I am a follower of Jesus, a wife, and stay at home/work from home mom to a 4 year old, a 2.5 year old, one little one who is no longer with us earthside, and our rainbow baby who is almost 4 months old. So when I mention a crazy life and sometimes needing to take a break for a week, this is why. 😜
I was diagnosed with celiac 18+ years ago. Zero clue what it was or meant. At the time, I thought my life had “ended” as I grew up in a conventional bakery household between my parents and my grandparents (my grandparents owned the bakery/old time general store). I didn’t even know what gluten was, much less how to do anything without it. But I did know I was so tired of being sick and tired 24/7. So we delved into all the things. Fast forward a few years, I started learning more and more about food, nutrition, holistic health, and non toxic living. I had many other health struggles along with celiac, so after being gluten (corn and soy) free for a few years, I actually wound up eating a ketogenic diet for 8 years or so. Reversed a lot of health issues (including depression and anxiety I had my whole younger life), and was the healthiest I’d ever been. I was able to transition to a more paleo way of eating, and after that, I found gluten-free sourdough! The sourdough that everyone is making these days is not anything like the Sourdough I grew up on! It was all overwhelming and confusing to me, but I really wanted to see if a fermented grain would work for me and my severe arthritis pain, mood, and blood sugar (which were the big reasons I had gone off of grains). To my surprise, my body didn’t reject it! That sent me into a huge search for clean, as close to whole food sourdough versions of food that I could find! We don’t do soy, artificial food colorings, artificial flavors or ingredients, my own family eats very limited cane sugar still, I make almost every meal at home…so *clean* foods are extremely important to me! Side note: I was actually on the verge of finding a holistic nutrition school I wanted to attend before my bakery took off. That’s how passionate I am about health and holistic living!
