Our beef comes from all different breeds. All different ages. We pride ourselves in our beef being as consistent as possible with flavor & tenderness. Obviously, sometimes it will vary a bit from animal to animal....but not much. We are firm believers that great beef comes from stress free animals. Stress free handling, no environmental stress....a life of zero stress. This is why we move our cattle often to new grass, and never handle them in a fast-agressive manner. We always send them for processing, when they are on the gain. Grass-fed and Grass-finished beef that melts in your mouth.
That said. This London broil came from a 4 year old Highland. Pan fried for a quick lunch. It is so delightful 😊. May be the best yet. 🤔
