Common Wealth Farm LLC Our farm, established 2010, raises and processes pastured, organically-fed chicken and turkey on sit Our motto is, "Local Food Is Our Common Wealth."

Started as a family farm, it is owned by Charles and Jackie Wilson and managed by son Tim. We strive to practice sustainable and ecologically sound methods in all our endeavors. We sell our products at farmers' markets, restaurants, and community markets in Maine. When creating value added products, we either grow our own items or try to purchase them from Maine farms and vendors.

If you're having withdrawal symptoms from running out of our organically-fed, raised- on-pasture-all-summer chicken, there is good news! Good Tern Co-op in Rockland will carry our chicken this winter.

Another source is Daybreak Growers Alliance in Unity, an online ordering service that offers our chicken plus many other local and organic farm products with delivery.

Also, we will be at Bangor Farmers Market every first and third Sunday through April with chicken and eggs to replenish your supply. Email us at [email protected] to place your pre-order.

Speaking of eggs, Belfast Community Co-op will be selling our on-pasture, non-GMO eggs throughout the winter.

Don't miss your last chance to get the last of our fresh, never frozen, chicken tomorrow at Bangor Farmers Market, 11-1:30. When you see only two chicken tractors on the field, you know the season, that runs from March to November, is almost over. Midsummer months we would have 18 tractors full of 3-8 week old birds while the nursery brooders would hold up to 1,250 chicks. Every week we processed about 250 chickens and received 500 new chicks every two weeks. It takes excellent management skills to keep the birds healthy and rotating in a timely fashion. Kudos to farm manager Tim and assistant Beth for their outstanding field work. And a big shout-out to Tim, Beth, and Dorothy for their superb processing skills that ensured a high quality product ended up on your table!

Tomorrow, Nov. 13, and Sunday, Nov. 20, 11-1:30, are the last regular markets of Bangor Farmers Market before we change to our winter schedule of first and third Sundays, 11-1, at same location across from the library. Weather won't stop us from being there! We have loads of your favorite cuts, fresh and ready to cook!

All it takes to make a good bone broth is to throw into a stock pot chicken frames/bones, carrot, celery, onion, and your favorite herbs. Cover with water and let it simmer for at least four hours - or - try your instapot or pressure cooker for quicker results. Broth is great for cooking rice and as a base for soups. Forty-two baby quail hatched in the incubator this week. Barely an inch or two long, they will reach adulthood in a few short weeks. Chefs use their eggs in soups and salads. It takes about five quail eggs to equal one chicken egg.

By far, the most asked question we get at farmers' markets is "What's a SPATCHCOCK?", a great conversation starter. Evidently, in days of yore in Ireland, a game bird was "dispatched" (nice word for "it met its maker"), split open along the spine, flattened, and roasted, with the addition of the word "c**k" (rooster) (https://www.etymonline.com/word/spatchc**k). A more likely and obviously closer definition is the word "spitchc**k", a method of cutting an eel into short pieces, dressing it with herbs and bread crumbs, and broiling or frying it. (https://worldwidewords.org/qa/qa-spa1.htm) Whatever its origin, a spatchc**ked chicken cooks faster than a whole chicken, is self-basting, and is one of our most popular cuts. If you are stocking up your freezer, they are great for stacking! Amaze your guests with a succulent spatchc**k, grilled or roasted, this weekend!

Once the baby chicks are nestled in their brooders, it's time to "tune up" the chicken "tractors" for the month-old birds that are ready to go on pasture. Chicken wire fencing and screening are added or repaired to deter predators. Heavy tarps provide weather protection. When the birds are in their new home, the tractors will be moved daily to fresh grass and clover. Mid-summer there are usually about 18 tractors. (All this under the careful supervision of Tiko!)

Quail eggs and meat are another of the products we raise and sell. For the first batch, we buy in the eggs. They are incubated for about 14 days. At that time, they go into "lock-down" where the incubator stays closed until hatch is complete. Like baby chicks, they will move to a brooder until they're ready to go into outdoor housing. From then on, we harvest and hatch eggs from our own quail.

QUICK QUAIL EGG vs CHICKEN EGG FACTS
•It takes 3-5 quail eggs to equal 1 chicken egg.
•13% proteins in quail egg vs 11% in chicken egg
•5× as much iron & potassium in quail eggs
•2× as much Vit. A and B2 in quail eggs
•Quail eggs are richer in phosphorus and calcium
•Quail eggs have a high HDL cholesterol content ("good fat")

Use quail eggs as you would chicken eggs. They're favored in restaurants for soups and salads.

March is our start-up month for poultry season and this routine will happen every two weeks into November. One-day old chicks arrive and are immediately nestled into their 95-degree brooder for 2 weeks. As they age, we lower the temperature, and they move into another brooder. New chicks arrive every two weeks. After two more weeks, when they're feathered out, they go on pasture in "tractors" that get moved every day. Part of the maintenance is shoveling out brooders and composting the manure and shavings.
