Red Wine Braised Short Ribs

A rich, slow-braised short rib recipe made with red wine from Rancho Guejito.

Ingredients

* 2.2 lbs bone-in beef short ribs
* Salt and black pepper, to taste
* 1 to 2 tbsp oil
* 2 carrots, diced
* 2 celery stalks, diced
* 1 yellow onion, diced
* 2 tbsp tomato paste
* 2 tbsp flour
* 1ยฝ cups red wine
* 2 cups beef stock
* Water, as needed to cover ribs
* 2 bay leaves
* 2 sprigs rosemary
* 4 to 6 sprigs thyme
* ยฝ bulb garlic, cloves peeled and lightly smashed
* Chives, chopped for garnish

Instructions

1. Pat the short ribs completely dry with paper towels. Generously season all sides with salt and pepper.

2. Heat a large Dutch oven or heavy-bottomed pot over medium-high heat. Add oil.

3. Sear the short ribs for about 3 to 4 minutes per side until deeply browned. Work in batches if needed so the pot is not overcrowded.

4. Remove the ribs and set aside.

5. In the same pot, add the carrots, celery, and onion. Cook for about 6 to 8 minutes until softened and lightly caramelized.

6. Stir in the tomato paste and flour. Cook for 1 to 2 minutes, stirring constantly.

7. Pour in the red wine and scrape up all the browned bits from the bottom of the pot.

8. Add the beef stock, bay leaves, rosemary, thyme, and garlic.

9. Return the short ribs to the pot. Add enough water so the ribs are mostly covered.

10. Bring to a gentle simmer, then reduce heat to low. Cover and cook for about 4 hours, stirring occasionally, until the meat is fall-apart tender.

11. Remove the herbs and bay leaves before serving.

12. Garnish with chopped chives and serve with mashed potatoes, polenta, or crusty bread.

Our press's inner bladder inflates, gently squeezing the grapes and releasing their precious juice, ready to be collected.โ

Next stop for the grape juice? A big tank! Here, it's prepped for the crucial 'cold settling' stage. โ

Slides 4 & 5: Cold Settling Magic โ 
Imagine an ice bucket for wine, but it's a tank, and we use water with dry ice or a glycol chiller. This cool stage lets unwanted solids sink to the bottom, clarifying the juice while also delaying fermentation.๐ŸŒก๏ธโ„๏ธ After 2-5 days the juice is racked into barrels or tanks where fermentation begins as the juice warms up.โ

Letโ€™s take a trip back in time โณ

One of the many things that makes Rancho Guejito unique is its mostly untouched, original landscape. It is a snapshot in time, and this week it turns 178 years old!

Rancho Guejito is the last of over 800 Spanish and Mexican ranchos in California, still intact and privately owned. For 1000s of years, it was home to Native Americans, later providing them shelter and refuge from Spanish Conquistadors. Eventually, Spanish settlers grazed their livestock in its vast natural meadows, and Franciscan priests used the land to graze cattle for their missions. In 1845, Rancho Guejito became part of the Mexican land grant system, and a ranching legacy began.

Today, the rancho is more than just the tasting room, surrounding vineyards and groves that the public enjoys. It is home to thousands of acres of organic avocados, lemons, grapefruit, vineyards, and hay fields. Not to mention the 1000s of grass-fed, all-natural beef graze on its open range. That says nothing of the habitat it provides for the abundant, thriving wildlife and over a ยผ of a million oak trees!

There are no words for the magic it contains! Here's to another 178 years! ๐Ÿฅ‚
