His extensive background includes classical training in global cuisine and collaborations with renowned c

hefs like Emeril Lagasse and Geoffrey Zakarian in opening multiple local restaurants, including those within the legacy Sands Casino. Tonight I celebrated the Winter ’26 issue of Network Magazine at the gorgeous Vault 634 in downtown Allentown.

What a fun weekend in the Poconos again! This time for a bachelor party with some amazing food and guests. They wanted a “family style steakhouse vibe.” We said sure thing!

This evening’s menu….

Apps
- braised pork belly (citrus and Asian influence)
- garlic shrimp in a white wine and butter sauce with grilled sourdough

Mains
- chateaubriand (roasted whole tenderloin of beef)
- herb crusted lamb chops

Sides & Sauces
- garlic confit whipped potatoes
- creamed spinach
- roasted Brussel’s sprouts w/bacon & maple
- grilled asparagus w/ lemon
- green peppercorn demi glacé
- sauce bordelaise
- mint demi glacé

Dessert
