Fresh asparagus, pasta, and all the flavors of the season in one easy, shareable salad. πŸŒ±β˜€οΈ

Asparagus Pasta Salad

1 package of fusilli pasta cooked and chilled
1 cup of feta crumbles
1/2 cup of freshly steamed asparagus chopped
1 cup of diced cucumber or about 2 small cucumbers
1 green or red bell pepper, chopped

Dressing
1/2 cup olive oil
2 tablespoons of red wine vinegar
1 tablespoon of lemon juice
1/4 cup fresh parsley chopped
1/4 cup of fresh basil chopped
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon oregano
1/4 teaspoon garlic powder
1 clove of garlic minced

Add all of the ingredients together and using an immersion blender blend until creamy.

Add all of the ingredients for the pasta salad in a bowl and mix together.

Chilled Asparagus and Lemon Preserve Pasta salad with Basil Ricotta Chili Sauce

3 cups of cooked pasta slightly warm
1 preserved lemon sliced
1/2 cup of freshly shaved asparagus

Basil Ricotta Chili Sauce
1/3 cup olive oil
Juice from one lemon
1/2 tsp of lemon zest
1/3 cup + 2 tablespoons of ricotta
1/4 cup of fresh basil chopped
2 teaspoons of chili crisp
1/2 teaspoon salt
1 1/2 tablespoons of lemon preserved rind
1/8 teaspoon pepper
1/8 teaspoon oregano
2 cloves of garlic minced

Using an immersion blender mix the sauce. Add the sauce to the pasta and mix well top with freshly chopped basil and enjoy!

A fresh take on spring 🌱 shaved asparagus, preserved lemon, and creamy feta layered over seasoned quinoa and finished with a honey lemon preserve vinaigrette. Balanced, vibrant, and built to highlight peak-season flavor.

Shaved Asparagus Feta Lemon Preserve Salad
1 cup of cooked Quinoa seasoned with salt and pepper
1 small zucchini shredded
1/3 cup of shaved asparagus
3/4 cup of feta
1 small preserved lemon sliced
1/3 cup of microgreens

Honey Lemon Preserve vinaigrette
1/4 cup olive oil
2 tablespoons of lemon juice
1 clove of garlic minced
1 1/2 teaspoons Dijon mustard
1 1/2 tablespoons of lemon preserved rind
4 tablespoons of honey
Salt and pepper to taste

Add all of the ingredients together and using an immersion blender blend until creamy.

Add all of the ingredients together for the salad and mix. Top with dressing and enjoy.
