Sun Exposure: Cauliflower naturally develops a yellowish or beige pigment when it is exposed to the sun while growing. Commercial growers often tie the outer green leaves over the head as it grows (a process called "blanching" in the field) to block the sun and keep it stark white. Reestablished by Paul and Missi Duley in 2018, the farm offers fresh, locally grown produce directly to the community. Some of the proceeds support the restoration of our historic stand and infrastructure upgrades, moving us closer to our dream of opening a country store featuring local produce, baked goods, crafts, and beef. What Does It Taste Like?

The Dairyu is a Japanese-style hybrid eggplant featuring a wonderfully tender, mild, and slightly sweet flavor profile. Unlike traditional globe eggplants, it lacks heavy bitterness, boasting a delicate skin and a creamy, melt-in-your-mouth texture when cooked.

How Do You Use It?

Because it is long, slender, and less watery than other varieties, the Dairyu is a dream to work with in the kitchen. It absorbs culinary flavors perfectly.

Here are some favorite ways to prepare it:

Sautéed or Stir-Fried: Its firm yet tender flesh holds up beautifully to high-heat tossing with garlic, ginger, and soy or miso.

Grilled or Roasted: Slice it lengthwise, brush with olive oil, and char it to perfection to bring out its natural sweetness.

Summer Curries & Ratatouille: It easily absorbs rich sauces without turning to mush, making it perfect for stews.
