Dice chicken, marinate in spices, 1 Tbsp lime juice and chipotle sauce (I leave for 15 minutes or while I’m prepping my sides).ā €
Dice tomato, thinly slice onion and add chopped coriander to taste. Season with salt, pepper and lime juice.ā €
Cook chicken (I used air-fryer, but you can pan fry) for 8-10 minutes until cooked through.ā €
Serve with sides as desired.ā €

āœ… The chicken has a great flavour, similar to Guzman spicy chicken. This one is super easy to meal prep and add heaps of sides, if that be grilled vegetables, avocado, yoghurt, cheese or bulk up the rice. I’ve made many bowl variations on my page for different options. This will be added to my regular meal prep list, so yummy and easy. The marinate would also be nice on cauliflower or protein substitute.

1/4 cup Caesar Salad Dressing (swipe for my recipe)ā €

Prep salad dressing (as per slide) or select a macro friendly dressing. ā €
Season chicken (I used garlic powder, S&P, oregano and sumac) and cook as desired. ā €
Cook bacon and egg to taste.ā €
Rub bread with garlic, season with salt and toast. Cut to make croutons.ā €
Combine salad, dressing, chicken, bacon, croutons and parmesan in a large bowl, mix. Top with egg.ā €

āœ… I really dislike anchovies, trust me that you can’t taste them in the dressing! This is a high volume dish to keep full. Don’t stinge on the salad for volume. Add extra vegetables like tomato, cucumber and capsicum for more micronutrients if desired.

1 slice sourdough breadā €

This recipe is super versatile with ingredients, I change it all the time. The main flavour comes from the spices, garlic and the tomato. You can add different proteins to this like beans, ham, poached chicken etc and lots of different fresh herbs. To cut calories avoid the oil, cheese & bread.ā €

Sauté the onion, garlic and spices in oil on medium heat for 2-3 minutes until fragrant.⠀
Add the tomato paste and mix, add the tin tomato. ā €
Mix for another 3-4 minutes on low heat. ā €
Make wells in the sauce and crack the eggs into the spaces. ā €
Cover pan with lid and cook for 5 minutes.
