Here are some of my thoughts on the BBQ Daddy Charcoal I mentioned a while back (and there is a coupon code at the end of this post.)
South American hardwood lump charcoal is sort of a staple among the hardcore charcoal smokers and grillers. Most people seem to prefer the characteristics this charcoal has to offer. Without a really specific count, I think I have used about 10 different brands of South American sourced hardwood lump charcoal. These include Kamado Joe Big Block, several varieties of FOGO, Jealous Devil, Wicked Good Charcoal, just to name a few of the favorite brands across the market.
I think the most distinctive characteristic of these charcoals is the aroma. These coals produce a nice smokey aroma that is harder to find in mass produced North American charcoals. This is due to the wood species in use and the more rustic manufacturing process involved. The White Quebracho (included in my photos) is one of the most choice selections of hardwood for making this kind of coal. White quebracho (from the Spanish "quiebra-hacha," literally meaning "axe-breaker") gets its nickname "axebreaker" because of its extreme hardness and density. That hardness and density translates to a lot of BTUs of cooking power when the wood is carbonized in the rustic ovens (shown in photos) in South America. The BBQ Daddy Charcoal that I'm speaking of today is made from 100% White Quebracho instead of a blend like most of the competitors.
These charcoals, in my experience, produce enough smoke flavor and aroma on their own in my smokers. I don't feel the need to add any additional smoking wood chips or chunks to achieve my desired results. I highly recommend trying this coal without any smoking wood additions until you get a feel for it. No one is gonna complain about not enough smoke. Everyone will complain about too much!
In my social media circles, the biggest whine that folks have about their hardwood lump charcoal is the size of the chunks not being large enough. BBQ Daddy Charcoal has tackled that problem by offering hand selected assortments of coal pieces. You have several options from which to choose.
I did two cooks with this coal. I cooked a pork butt low and slow and cooked a whole chicken at 400°F. The flavor and cooking profile of this coal is excellent. I would place this coal at the top of my list for quality in this category. My RECOMMENDATION for this coal when using the super large pieces is to include some smaller pieces with it when lighting it. The larger pieces take a little longer to get going on their own without a little help from some smaller pieces.
