Porkstrami... what is it?!?! Last week, We took over 90lbs of Pork Butt and placed it into the same cure we use for Hoebe's Corned Beef. They have been soaking in the cure for a week now and are ready to be rubbed down with a mustard binder and seasoned with Black Pepper, Garlic, and Coriander. On Friday, this Porkstrami will be smoked until pulled just in time to serve on Pulled Porkstrami Po' Boy at Bolo Beer Co. this Friday starting at 6pm.

Take the afternoon and head to the great events in Valentine! Mr. Blake is setup at Humdinger Boots for the Block Party until 8pm serving Hoebe's Smoke 'N Meats Looney Brats with Loaded Kraut and Chips for $10. Come and get some grub! Bunkhouse Restaurant and Lounge is there with the beer garden as well as Bolo Beer Co. with a beer tent. Then stay for Texas Country Music from Chaser Crouch and Bailey Rae! You will not be disappointed!

We are also setup at Frederick Peak Golf Club serving Hoebe Burgers and Chips. Or Purchase a meal ticket for $15 (All goes to the Brooks Arnold Foundation) for Smoked Chicken Thighs, Baked Beans, and 7-Layer Salad.

BLT Season is all but here... and Hoebe's is stocked up on Pepper Bacon! This pork belly is cured in house for two weeks and then smoked sliced and packaged in 1lb portions for $12. Head to one of your favorite local producers for some lettuce and tomatoes and then pair it with some bread from your favorite bakery for the best BLT youll ever have!

- Skirt Steak Fajita Friday will kick off the weekend at Bolo Beer Co. starting at 6pm.

- Brooks Arnold Foundation Golf Tournament Saturday at Frederick Peak Golf Club. The time has come…We’re headed to worlds! I’ve been grinding this season. I was able to pull off the win in the junior division at state for the 3rd year in a row! I spent a lot of time at regional and local events and it showed, I was able to finish the season ranked #1 in the state of Nebraska!!! I worked really hard this season and I will work really hard this week to represent Nebraska on the world stage! I’m locked and loaded ready to see what these BG CO****LE Wizard Ls can do 💪

I tell ya what... we take some serious pride in doing things the right way here at Hoebe's Smoke 'N Meats, or at least trying to! And that can be open to interpretation but, that includes paying attention to the sides as much as the meat that comes off the smoker! Hoebe's Smoked Chicken has won some awards at small local BBQ competitions and might outshine the brisket at times. But, how about the Collard Greens! I have had several people rave about these over the last few years... including people who grew up or lived in the south and enjoyed their grandma's (or whoever's) collards! If you haven't had them, then here's your chance at Bolo Beer Co. this Friday starting at 6pm with Smoked Chicken Hind Quarters.
