Owner/farmer, Larson Smith cultivated his passion for farming while growing microgreens and other plants to feed himself and his loved ones out of his basement and unused office spaces. Finally ready to make a career-shift, Larson decided to team up with long-time friend, Jakob Ssostrand to make a go at farming full-time in 2016. Quite serendipitously, that was the same year the founders of Sunshine Cove Farm were looking to to pass on their farm business. The handoff was seamless, and with his deepened wisdom, newly acquired equipment, and stockpile of seeds, Larson moved operations to Valle Crucis, NC in 2017. With the help of his crew and partner, Michelle Dineen, Sunshine Cove Farm continues to provide The High Country and beyond with the finest and rarest microgreens, shoots, and edible flowers. You can expect to see more plant starts, specialty vegetables, and other surprises this season as the farm continues to grow!
OUR PRACTICES
All of our microgreens are grown in soil without the use of unnatural inputs. We grow in greenhouses, which provide the young plants access to needed sunlight, while protecting them from the elements and allowing us to create the most favorable conditions for each variety to thrive. Our produce is harvested, triple-washed and dried by hand, according to the highest standards of post-harvest handling practices.
You can expect super fresh, nutrient-dense, full flavored greens with an excellent shelf life (10+ days)!
