You’re out of mayo, but the last thing you want to do is run to the store. We got you.
All you need is 1 cup of Bella Vado Avocado Oil, 1 egg, 1 Tbsp Dijon mustard, 1 Tbsp apple cider vinegar, 2 tsp lemon juice, 1/4 tsp salt.
Add Bella Vado Avocado Oil to a pint size jar. Add in the remaining ingredients except the egg.
Once all the ingredients are in the jar, carefully crack and add the egg.
Using an immersion blender, hold over the egg and blend until it becomes creamy. Slowly move the immersion blender up and down - blend the ingredients until it becomes mayo.
You can store it in the refrigerator for up to 2 weeks.

Elevate your cauliflower with this delicious Chilli Lime roasted Cauliflower recipe! 🍽️
Ingredients: 1 medium cauliflower (cut into florets), 1 tbsp of our Bella Vado extra-virgin organic avocado oil, 1 tsp paprika, 1 tsp garlic powder, 1/2 tsp salt, black pepper
Sauce Ingredients: 2 tbsp Bella Vado extra-virgin organic avocado oil, 1 lime (zested), 1/2 lime (juiced), 1 tbsp honey, 1 tsp chilli flakes, fresh parsley (chopped)
Recipe:
1) Preheat the oven to 400°F (200°C).
2) Take a large bowl and add in the cauliflower florets, Bella Vado avocado oil, paprika, garlic powder, salt and pepper. Toss ingredients well.
3) Grab a baking tray and lay down parchment paper. Lay tossed cauliflower onto the baking tray and let roast for 20-30 minutes.
4) Mix sauce ingredients into a small bowl. Transfer the sauce into a small pan and cook on low heat for 1 minute.
4) Pour sauce over cooked cauliflower and enjoy!😋👍🏼

Beat the summer heat with this refreshing spinach and berry salad with red wine vinaigrette!☀️🥗
Ingredients for salad: 6oz baby spinach, 6oz strawberries (cut into small chunks), 6oz blueberries, 4 oz fresh mozzarella pearls (cut into 4 small pieces), and a handful of sliced almonds.
Ingredients for vinaigrette: 1/4 cup of our Bella Vado organic extra virgin avocado oil, 1/4 cup red wine vinegar, 1/2 tbsp maple syrup, 1/8 tsp paprika, 1/8 tsp garlic powder, and salt and black pepper to taste.
Instructions:
Prep your toppings. First, wash and cut strawberries into small chunks. Wash your blueberries. Then, cut your 4 mozzarella pearls.
Prep the salad. Grab a large serving bowl and place 6oz of baby spinach inside. Add in your toppings and toss the salad. After this, you may place this to the side.
Combine your vinaigrette ingredients in a jar and whisk until it’s well combined.
Add the vinaigrette to the salad and you’re ready to serve!🍽️

Makes the perfect side salad for any lunch or dinner party, takes no time to prepare and you can make it ahead of time! You make the dressing in the bottom of the mixing bowl which helps with making sure all lettuce quarters are well coated and no drop gets left behind! Ingredients: 2 gem lettuces, 2 tbsp mayo, 2 anchovies, 2 tsp dijon mustard, 1 lemon, 40ml Bella Vado Avocado Oil, 3 tbsp approx finely grated parmesan (plus extra for garnish if required), and black pepper.
Finely dice anchovies then add to a mixing bowl with the mayo, mustard, lemon juice, avocado oil, and parmesan. Mix well. Cut lettuces into quarters and add to the bowl then gently toss with tongs until all quarters are well coated. Lay onto a serving plate then drizzle over any remaining dressing and season with black pepper. Sprinkle over additional parmesan if required.

BRUSSELS SPROUTS WITH BACON, CANDIED PECANS & BALSAMIC REDUCTION Not only is this one of my favorite side dishes, it’s also the dish that will turn Brussels sprouts haters into lovers! Ingredients:2 lbs Brussels sprouts, trimmed and halved; 2 tbsp Bella Vado avocado oil; 1 tsp salt + 1/2 tsp black pepper; 1 lb thick-cut bacon; and 1 cup Bella Vado balsamic vinegar Candied Pecans Ingredients:4 cups raw pecans; 8 tbsp unsalted butter; 1/3 cup coconut sugar; 2 tbsp cinnamon; 1 tbsp vanilla extract; and a pinch of saltBalsamic Reduction Directions:add balsamic vinegar to a small saucepan and bring to a simmer over medium heat simmer for ~30 minutes, stirring frequently, until reduced to about 4 tablespoons Brussels Sprouts & Bacon Directions: - Preheat oven to 400F- Add Brussels sprouts to a baking sheet- Drizzle with avocado oil and season with salt and pepper and toss until evenly coated- Bake for 25-30 minutes- On a separate baking sheet, add bacon and bake for 18-20 minutes until crispyCandied Pecans Directions: - Preheat oven to 325F- In a small saucepan over medium heat, melt the butter then stir in the coconut sugar, cinnamon, vanilla and salt and whisk until combined. Remove from heat and let cool slightly- Add pecans to a large bowl then pour the melted butter mixture over the pecans and toss well to combine- Pour the pecans onto a baking sheet lined with parchment paper, spreading them out into an even layer- Roast for 18-20 minutesAssemble all ingredients together, drizzle balsamic reduction over the top, toss until evenly coated and enjoy! Garlic mushroom chicken pasta 😋 Ingredients: 4 Boneless skinless chicken breasts, thinly sliced; 2 tablespoons Bella Vado Avocado oil; salt; Pepper; and 8 ounces sliced mushroomsCreamy Parmesan Garlic Sauce:1/4 cup butter; 2 garlic cloves minced; 1 tablespoon flour; 1/2 cup chicken broth; 1 cup heavy cream or half and half; 1/2 cup grated parmesan cheese; 1/2 teaspoon garlic powder; 1/4 teaspoon pepper; and 1/2 teaspoon saltIn a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in the center. Remove chicken and set aside on a plate. Add the sliced mushrooms and cook for a few minutes until tender. Remove and set aside.To make the sauce add the butter and melt. Add garlic and cook until tender. Whisk in the flour until it thickens. Whisk in chicken broth, heavy cream, parmesan cheese, garlic powder, pepper, and salt. Add the chicken and, mushrooms back to the sauce and serve over pasta as desired.
