Cheese Manakish

Bread Dough
3 cups all purpose unbleached white flour
1 cup warm water
1 Tbsp yeast
1/2 cup sugar
1/4 cup extra virgin olive oil
1 tsp salt

In a mixing bowl add water and oil first. Next add all of the dry ingredients. Use a mixer that has a hook or a bread maker. I'm going to skip the intricacies of mixing bread. If you need help, let me know. Let rise 1 hour.

When dough has doubled divide up into 12 dough balls. Flatten each into little pizzas. Sprinkle grated mozzarella cheese on each little pizza. Bake in a 425 degree oven for approx. 12 minutes or until dough is finished cooking.

In this picture, I sprinkled chopped parsley on it.

Kufta is probably one of the most popular of the Middle Eastern dishes. What may surprise you, is that women of Middle Eastern households pride themselves on their superior cooking skills. Essentially, what that means is you will have a savory and mouth watering meals at just about any home you go to in the Middle East.

1 lb ground beef (or ground lamb)
1/4 cup minced onion
1/3 to 1/2 cup minced parsley
3/4 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional, this is a Sarah flair)
1/2 tsp ground cinnamon
1/4 tsp ground allspice
1/8 tsp nutmeg
1/8 tsp ground cloves

Put all ingredients together in a bowl. Mush well with hands. Form into little footballs, torpedos, or mini hamburgers. Fry on med-high heat until browned. Place in a 350 degree oven to finish cooking. About 30 minutes.

In the same pot add 2 cups rice, 4 cups water, 1 Tbsp extra virgin olive oil, 3/4 tsp salt. Put on high heat and bring to a boil. Once rice and water are boiling, turn heat to low and cook for 20 to 30 minutes or until rice is done.

When the rice is done, the meat should be done. Remove meat from oven and place (with pan drippings) onto rice. Serve with diced tomatoes, chopped parsley and plain yogurt.

This is the French Herbed Chicken paired with grape tomatoes that I put under the broiler in my oven. You can sprinkle a pinch of salt and drizzle olive oil on it if you want. My mom and I ate this. If you want, i think pairing this with French bread or your favorite bread will be delicious.

Slow Roasted French Herbed Chicken

I whole bird, bag of organs removed and rinsed well with cold water.
1 tsp salt sprinkled on both sides of bird
1 tsp ground black pepper sprinkled on both sides of bird.
1 Tbsp of French Herbs aka Herbes de Provence
TIP: Make your own for mere pennies. Go to the bulk section of your favorite grocery store and put these dried herbs together. I think you may not find savory. No worries. Fred Meyer sells savory. Take it out of the plastic, put it on a plate and let it dry out in your fridg. If you purchase 1 Tbsp of each herb, you will be able to make about six chickens.

-basil
-thyme
-tarragon
-rosemary

Wrap bird in foil. Place in baking dish. Put chicken in a 275 degree oven and let it cook for 5 to 6 hours. Slow cooking allows the flavors to combine creating a mouth watering out of this world experience as well as a really moist chicken.

You can pair this with bagged salad and french bread if you're feeling lazy.

Today I'm going to make Borscht with turnips instead of potatoes. Borscht is a fancy name for beet & dill stew with sour cream plopped in the middle. I make my stews the old fashioned way. Low and slow... Plus, I bought two pounds of ground pork last night. I might, just might, even make borscht meat loaf. I'm still sucking down coffee and waking up. Let's see how bad of a case of the lazies I have.
