“Swaddle” - 6.9% hazy IPA featuring Citra infused honey.

I’m pleased to reintroduce a favorite recipe, rebrewed and reimagined for the first time in 3+ years. This is a special one, as I first brewed it to celebrate the birth of my first son, who just turned 6. It was also the first beer I fermented using my temperature controlled unitanks from .

While my recent hop forward brewing focus has leaned more into the dry, crisp, and bitter West Coast IPA spectrum, this beer is the opposite of that. A healthy dose of Golden Promise is complicated by flaked oats and wheat, getting equal doses of Citra and Simcoe throughout the hot and cold side cycle.

What makes this one special is the post-fermentation addition of Citra infused honey. For this batch I used honey from which has been popping up on shelves around these parts, and added some Citra hop hash into the mix.

The end result is a full bodied IPA meant for warming the body and heart, a beer designed to enhance celebrations and gatherings this time of year. Time to get out there and enjoy the first snowfall and the rest of the holiday season.

“Where the Sand Turns to Gold” - a 6.8% DDH West Coast IPA.

I recently travelled to Southern California for a work trip and got the opportunity to get inspiration from some of the best breweries SoCal has to offer. and are putting out some absolutely incredible, clean, hop saturated IPAs the likes of we just can’t get back east. While I returned home with a limited supply, necessity is the mother of invention. This is the latest chapter in my pursuit of bringing the best of the West to our shores.

A base of IPA malt was bittered aggressively with Simcoe before a large whirlpool charge of Simcoe, Amarillo, and Chinook. Dip hopped with Citra Incognito at knock out before fermentation as a hat tip to (who I got the pleasure of running into at ) followed by a heavy double dry hopping of Amarillo Cryo, Chinook Cryo, Citra, Simcoe, Mosaic, Citra hop hash and a touch of more Amarillo and Chinook.

A clean, crisp, hop saturated offering that combines dank, grapefruit, and pine notes undertones with citrus and berry forward aromas and flavor. I’m quite satisfied with the direction my West Coast IPAs are heading. Definitely more to come.

On a West Coast state of mind…

In the glass: “Essentials” - 6.8% West Coast IPA. All-Pilsner malt ( North Star Pils is my go-to). Simcoe - Mosaic - Citra - Strata. Chico yeast. Glass by 💀

In the tank: “P.S. Pils” - 5.0% West Coast Pilsner. Cascade hot side. Simcoe & Mosaic dry hop.

In the whirlpool: “Cold Essentials” - 6.4% Cold IPA. Pilsner & flaked rice. Simcoe - Mosaic - Citra - Strata (Roy Farms again). 34/70 warm ferment.

This past week I was lucky to attend the Brewer’s Retreat, hosted on the coastal shores of Delaware at . What an incredible and reinvigorating experience it was on so many levels.

Highlights of Day 1 included:

- brewing an IPA with Kelsey McNair () of and Steve Parker () of ; two IPA masters in their own right who shared tons of knowledge and insight as to what’s happening now in their breweries.

- meeting Vinny and Natalie of and scoring some of their Simcoe lot for rubbing and use in our beer. They as passionate and nice as any humans could be.

- hanging at the bar of Chesapeake and Maine@talking with Sam and Vinnie about how far they’ve come in building their breweries and the craft beer industry in general.

- having drinks at the hotel bar with the guys, including the man who claims to have created the Rahr dinosaur and a long admired homebrew author.

Day 2 top highlights were:

- sampling spices and learning the story of who is sourcing some of the most interesting, high quality ingredients possible for cooking and brewing.

- touring the Dogfish brewery, including seeing the OG sabco rig and their cold room, which is basically a Costco.

- cooking up a spiced red ale with Jason Perkins from and Khris Johnson of ; and absolutely nailing the specs in every way.

- tasting dinner at Dogfish Brewpub, getting to sample beers from each attending brewer alongside some great food and conversation

- late night bottle share at the Dogfish Inn where I finally got the chance to try some Hop-Fu!

As always, it was the people that made the experience. Aside from those mentioned above, I thoroughly enjoyed conversations with Henry & Adrianna (amazingly fun people!), Scott , Neil , () and a whole host of other brewers and attendees! And of course a tremendous thanks to the and teams for putting this all together. Until next time!

Today I said a bittersweet goodbye to on their last day of business. While I am truly sad to see it go, I’m incredibly thankful for all that it has given me.

Not only has this place played such a formidable part in my brewing journey, it has been the hub that connected me with so many people I now call good friends. When I first moved to the area back in 2018, it was Fermented that got me back into the homebrewing game. It was Fermented where I attended my first meeting and connected with many likeminded people who loved to make and drink craft beer. It was through Fermented where I brewed my first all-grain batch with Ken and Matt just over 5 years ago. It was Fermented I went to time and time again to gear up for brewday.

And it was Fermented that was the last homebrew shop standing in South Jersey, after , , and all closed shop. I know it wasn’t easy for Eric and Mica to keep it going for so long, and it only survived due their sheer dedication and passion for having a unique community space that scratched the itch of an ever decreasing small number of people. It is the type of place I fear is never coming back, but one whose importance will remain in the threads of South Jersey beer for decades to come.

So with that, there are no better or more important words than “Thank You”, from myself and so many others that can’t or don’t know how to express it. Thank you Eric. Thank you Mica. Thank you everyone who worked there, shopped there, promoted it, supported it. Thanks for keeping it going for so long.

What an absolutely incredible 4th of July holiday week. From sunset playground hangs on Tuesday to picking up sushi in a wet bathing suit on Sunday (and running into as an added bonus!) these past few days were exactly what living at the shore is all about.

So grateful to call this place home and continue to make beer, albeit less frequently, worthy of the magic of the Southern Jersey Shore.

Great time hanging at the yesterday. Thanks to everyone for braving the rain and coming out to party. We were so grateful to participate and spread the gospel of West Coast IPA.

The best part of yesterday was hanging out with friends and faces old and knew, especially .dan and of course Jack and the whole .brewlittles team that saw this through. And then there’s my longtime friend Joe who came out to help me pour. I enjoyed you laughing every time someone asked me where my brewery was located. Next time I’ll need to bring the “brewed in my garage in Northfield” sign to put front and center. So glad we got to catch up on life while having some fun.

And that’s what it’s all about, having fun with it all.

Just over one week out from MDW and the unofficial start to summer. That can only mean two things - new beer and tanks that are starting to sweat.

This is a fresh batch of ‘Essentials’, our all-Pils malt West Coast IPA hopped lovingly with Simcoe, Citra, Mosaic, and Strata.

We’ll be pouring this fine little number at the this Saturday behind .brewlittles alongside two other beers and whatever nonsense shows up with.

It’s a perfect day to enjoy a nice crushable lager, don’t you agree?

It’s been a while since we brewed this one, and we sure did miss it. “Shoreveza” is our light Mexican Style lager brewed with a pound of toasted Olotillo Blanco corn from . The toasted corn lends a subtle hint of fresh tortilla to this otherwise incredibly clean brew.

This batch came in a bit higher at 5.0%, was naturally carbonated towards the end of fermentation, and lagered for about 5 weeks before hitting the taps just in time for Cinco de Mayo.

We are gearing up for the busy summer season over here and are less than 2 weeks away from sharing this beer and more hoppy suds at the hosted on 5/18 right behind .brewlittles, in support of . Head on over to grab your tickets now to what will undoubtedly be a fantastic day.
