We'll have Chilaquiles, choice of green & red salsa, topped with cilantro, pickled onion, queso fresco, mexican crema, refried beans, and an option of an egg.

✨ Homemade Flour Tortillas ✨

Soft, warm, and made with just a few simple ingredients — but behind every tortilla, there’s centuries of tradition and love. 💛

Tortillas have been at the heart of Mexican kitchens for thousands of years, first made with corn (maíz nixtamalizado) by ancient civilizations, later joined by wheat flour after it was introduced by the Spanish. Over time, each region, and each family made them their own. 🌾

Here’s my go-to recipe for soft, pillowy flour tortillas:

*Ingredients:*

- 4 cups all-purpose flour
- 2 teaspoon salt
- 2 teaspoon baking powder
- 1/3 cup vegetable oil
- 1 cup warm water (around 105°F to 115°F)

*Instructions:*

1. In a large mixing bowl, combine flour, salt and baking powder.

2. Add vegetable oil and continue mixing.

3. Gradually add warm water, mixing with a fork until dough forms. (You can use a stand mixer if you don't have patience like me)

4. Knead dough for 5-10 minutes until elastic.
