Peacock Cheese was founded in 1946 as a small family run dairy producing fresh and unique cheeses. Since 1986 is has evolved to one of California’s largest suppliers of gourmet cheese and wine to specialty food retailers, restaurants, hotels and cruise lines. Along with its vast selection of domestic artisan products, Peacock imports from Argentina, Austria, Belgium, Canada, Denmark, England, France, Germany, Greece, Holland, Ireland, Italy, Portugal, Scandinavia, Spain and Switzerland. Today their product line includes a wide range of over 1,000 items including specialty cheeses, crackers, charcuterie, pâtés, olives, butters and many other gourmet commodities. As cheese ages, the flavor evolves and the texture of the cheese matures. In order to allow the cheese to reach its full potential, Peacock Cheese specializes in fresh cutting and wrapping their products with perforated sheets instead of the more common practice of vacuum sealing, which does not allow the cheese to breath and evolve. The Filippinis are also very proud of the wine that they are producing in Paso Robles California at Le Vigne Winery. Seeing that wine and cheese has gone hand in hand for many centuries this has been a very nice pairing.
