🔥 Birria tacos absolutely flew off the truck this weekend — y’all did NOT play.
Braised short rib, melty chihuahua cheese, onions, rich consommé, and a pop of micro cilantro… it was basically a sold‑out love story.

Thinking this one might need to become a permanent special. What do you think — should Birria stay on the Maillard special menu?

Two custom Pat LaFrieda smash patties, thick‑cut Nueske’s bacon, a homemade fried mac & cheese patty, naturally fermented pickles, and our proprietary sauce — all stacked on a toasted Martin’s potato roll.
