Cedar Grove Cheese will be here 10am to 1pm today to demo their cheese! It's an extra special demo because one of our employees is also doing an internship there!

Kirana is a recent high school graduate and a cashier at Miller’s. This summer, she also has an internship at Cedar Grove Cheese, a cheese company in Plain, WI. Kirana has read about the cheesemaking process, as she is exploring becoming a licensed Wisconsin cheesemaker. She said it's incredible to be in Cedar Grove’s Make Room watching milk turn into cheese, then see the same cheese on the shelves at Miller's.

"We start with milk from small local farms, which is heated and mixed with starter cultures. The first big, visible change is after adding rennet and calcium chloride: the milk “sets” into a white jello-like texture that is cut into curds. But before that, something I didn’t realize before is how much the specific milk and culture can affect the final flavor. Because cows’ diets can vary by region and season, especially if they’re eating grass, it changes the milk they produce. The cultures are lactic-acid producing microbes, and while a number of varieties can be used, they impart different flavors from sweet to barnyard to buttery."
