For our Easter dinner this year I decided to go Mediterranean.

Greek marinated grilled pork chops, Greek smashed potatoes with feta, red onion, and garlic, Mediterranean roasted carrots on herb yogurt tahini sauce with honey, feta, and pepitas.

If you like runny yolk eggs and a little spice, you have to make these eggs!

These quantities don’t have to be exact and you can adjust for your tastes.

4 eggs (crack them into a bowl and don’t break your yolks)
1/4 Cup Heavy Cream
1 Tbsp Chili Crisp
1 Green Onion (sliced and divided)
Everything Bagel Seasoning
Salt & Pepper

Heat a nonstick pan over medium-high heat. Add heavy cream and chili crisp, stir to combine. Bring to a simmer and cook for about two minutes, stiring occasionally. Lower heat to medium-low. Add eggs being careful not to break yolks. Add the whites of the green onion. Season with bagel seasoning, kosher salt, and pepper. Cover and cook until egg whites have set. Top with green onion tops and extra chili crisp. I had mine with a toasted and buttered everything bagel. You can serve with toast or whatever you like.
