Hey y’all! Welcome to the No-Mento Cheese party! Most of you here already know…. But if you’re new, here’s the gist:
It’s Pimento Cheese…..
….without the Pimentos.
Yea, you read that correctly. Not a Pimento in sight!
Years ago, when I was developing The Marketplace Café, I had a full lineup of sandwiches and salads and chicken salads ready to go… and someone said, “You’re opening a lunch cafe… in the south… geared primarily towards ladies-lunching…. You gotta have a Pimento Cheese on the menu.”
I agreed. But, I despised Pimento Cheese.
So I set out to testing and developing one that I thought I could stand, with a handful of happy taste-testers, and the “Spicy White Pimento Cheese” was born. And as soon as we opened the doors, it shot to the top of the line as the hands-down best-seller of everything we had to offer. Lines at the farmer’s markets, people showing up to buy it by the quart for tailgate parties, a steady stream of messages from people begging me for the recipe… Turns out- a lot of people didn’t like Pimento Cheese either! Until they tried mine… which was unashamedly lacking the briny, acidic, olive-y Pimentos. (Plus a few more special twists 😘)
Fast forward ten years to today, this old favorite (with a bit of a cult following from the folks in North Alabama) has a brand new name, a new look, and a new home-base… but still as addicting and decadent as ever!!
