We are in close proximity to the Finger Lakes and Ontario wine regions in central New York State. We utilize high quality, hand-picked grapes from the Finger Lakes and Lake Ontario viticulture areas. We follow a hands on process to produce ultra premium sparkling and still wine from the cool-climate varietals of Cabernet Franc, Pinot Noir and Chardonnay that thrive in the surrounding region. These
varietals are so important to us, you can find them represented in our logo. The feathers of our bird have the colors purple, representing Cabernet Franc, burgundy representing Pinot Noir and yellow representing Chardonnay. The orange in the body of our bird represents the various songbirds (particularly warblers and thrushes) that inhabit our farm. Our tasting room, converted from thoroughbred horse stables, is a unique setting that provides a memorable experience for an afternoon of wine tasting. Enjoy a glass of wine on our patio paired with a charcuterie board or vegan plate. Our Wine & Food pairings include 5-6 wines per guest. Each month we acquire fresh and in season ingredients to create a fixed menu that pairs perfectly with our wines. Our sparkling wines are produced in the Méthode Champenoise or traditional method where the wine carbonates via a secondary fermentation in bottle, and is then riddled, disgorged and topped off with a dosage before corking. As well as producing single varietal Cabernet Franc, Pinot Noir and Chardonnay, we also produce a still, white, barrel-aged blend of the same varietals demonstrating the full versatility of the grapes.
