🚨 VICTORIA STORE UPDATE 🚨

These are our current cases, and while they’re looking good, the crew is still hard at work making more!

We’re currently making fresh Butler, Chile Pequin, and El Jefe boudin, and those will be hitting the case later today. Don’t worry if you miss this batch—we’ll be making more tomorrow as well.

We’ve also got beef cheeks on the smoker today, which means fresh Barbacoa boudin will be rolling out tomorrow. 🔥

Brandon is currently cranking out FIVE different kinds of sausage, and the team is grinding meat as fast as we can to keep everything stocked up for y’all.

We’re going to keep this production train rolling through close of business Saturday, so now is the time to stock up for the weekend.

🚨 UPDATE FROM THE BLOCK 🚨

Y’all showed up BIG today, but we’re ready for the final push!

We’ll have a full team in tomorrow and the crew will be working hard to keep the cases stocked. We’ve got enough meat ground and ready to make 3-4 different flavors of boudin, but it will likely hit the cases later in the day.

Friday will be our final batch of Barbacoa Boudin and Brisket Boudin, so if those are your favorites, don’t wait around.

We’ll start tomorrow morning with 30 pounds of pan sausage and chorizo in the case, plus we’ve got another 200 pounds of sausage already ground and mixed that we’ll be stuffing mañana.

To keep up with demand, we have 50 more cases of beef and pork arriving to get us through the final 3 days. We’ll also do our best to make another round of boudin for Saturday, depending on how busy things get Friday.

Good news for the steak lovers — Wagyu steaks are back tomorrow, and we are absolutely LOADED down with red meat.

Morning Victoria. We’re pretty much blown completely out today till we get a truck in ….. We will post when it’s arrived. Thanks for the love yesterday we did 3/4 of a normal week’s business yesterday alone. So we ordered more and the team will be restocking today.

Hey guys, we wanted to give y’all a quick heads up…

When we opened this morning, there wasn’t a parking spot available. The team had the cases as full as we could possibly get them, and they’ve already been picked over again. We’re making boudin and sausage as fast as we can, cutting steaks nonstop, and doing everything possible to keep the cases stocked.

To put it into perspective, we’ve done nearly two days’ worth of business in just one hour. We are incredibly grateful for the support and last-minute love y’all have shown us.

Please bear with our team as we work hard to keep these cases full through Saturday. The crew is busting their tails to take care of everyone.

One thing we do ask: please be respectful to our staff. Rude or abusive behavior will not be tolerated and service will be refused. Our team is working as fast as humanly possible to keep up with the demand.

Thank y’all again for the overwhelming support. We appreciate every single one of you and thank you for letting us serve this amazing community.

FOOD TRUCK UPDATE 🚚

Our last day serving outside The Chopping Block Victoria meat market will be June 27.

Don’t worry—the food truck isn’t done yet! We’ll still be serving at Victoria’s 4th of July celebration, and we’re working on plans for what’s next and searching for a spot with water and sewer are a must. Power is optional if anyone knows of anything.

While we don’t have all the details finalized just yet, we’re excited about the opportunities ahead and can’t wait to share more when the time is right.

For now, come see us before June 27, and we’ll see you on the 4th!
