I am Miranda Lester, Owner of Gluten-Freedom Bakery located in Victoria, TX and since being diagnosed with Celiac Disease in May of 2011, I have set out to create wonderfully tasting gluten free treats for every home. *All products are baked fresh to order so ONE WEEK notice is REQUIRED for all orders.

*I operate under the Cottage Law which prohibits me from selling products which require temperature control. (Custards, Meringue, etc.)

The Victoria Farmers' Market will always hold a special place in my heart! It is where I started this little business. Through every expansion and step back of this adventure it has always been there and the customers are amazing, always welcoming me back each and every time.

The market made the list and is in the running for National Farmers Market of America. We haven’t made the top 10 National list YET but we are aiming for it!!! We are currently sitting at #3 in the State of Texas… TEXAS YALL!! But we still need your vote to make the Top Ten National List!

I’ve had something weighing on my heart lately, and I think it’s finally time I listen. ❤️

I’ve been praying a lot about finances, opportunities, and what God wants this next season of life to look like. And while I’ve been praying for doors to open, a few people have reached out asking about orders from Gluten-Freedom Bakery… and, if I’m being completely transparent, I haven’t answered those knocks at the door.

Life is FULL. Between being a mom, working, and everything else that comes with everyday life, I’ve kept wondering, How in the world am I supposed to add baking back into all of this?

But maybe that’s where a little faith comes in.

I don’t have to have the entire plan figured out before I take the first step.

So, Gluten-Freedom Bakery is going to slowly start taking orders again. 🥹❤️

And I do mean slowly.

I’m not jumping back into a completely open calendar or taking unlimited orders. I’m going to start with a limited menu and a limited number of orders while I figure out how baking fits into this season of my life.

Gluten-Freedom Bakery has always meant more to me than simply making something sweet. There is something incredibly special about making food for someone who normally has to hear, “Sorry, we don’t have anything you can eat.” I know that feeling personally, and being able to give someone a treat they can safely enjoy has always been one of my favorite parts of baking.

So I’m taking a step. Not because I have it all figured out, but because sometimes faith looks like being willing to walk through the door that’s already been opened.

I’ll be sharing more soon about what I’ll be offering and how ordering will work.

For now, I’m just saying yes to starting again. ❤️

✨ A little behind-the-scenes look at a recent collaboration ✨

Recently, I received an order for a gluten-free wedding cake. A few years ago, I would have taken on every part of the process myself without hesitation. But life looks a little different these days, and I’ve learned that sometimes the best way to serve a customer is knowing when to ask for help.

For this cake, I baked all of the cake layers and prepared the frosting to ensure everything remained completely gluten-free and safe for our customer. From there, the incredibly talented Courtney with Cake n’ it with Courtney
took over the assembly, decorating, and delivery to the wedding venue, bringing the customer’s vision to life beautifully.

One of the greatest lessons I’ve learned in business is that people in the same industry don’t have to be competitors. They can be resources, collaborators, and friends. When we support each other and focus on our strengths, our customers ultimately receive the best possible experience.

Courtney, thank you for your willingness to jump in and help make this wedding cake happen. Your talent and attention to detail made this project possible, and I am so grateful for the partnership.

May has always been a special month for me.

It’s Celiac Awareness Month.
It’s the month I was diagnosed with celiac disease.
It’s the month I started Gluten-Freedom Bakery back in 2014.
It holds Cinco de Mayo, Mother’s Day… and my birthday.

Normally every May I make a post celebrating all of that.

But this year… I didn’t.

Truthfully, there were moments this year where I started questioning baking altogether.

Life looks different than it did in 2014.

What started as a full-time passion has shifted over the years. My kids have gotten older, schedules have filled with extracurricular activities, and my career has grown in different directions. Somewhere along the way, baking started to feel more stressful than joyful.

Today reminded me of something though.

I found myself back in the kitchen with oldies-but-goodies playing in the background — back to the basics, back to the feeling that started all of this. And for the first time in a long time, I caught myself enjoying it again. Dancing around the kitchen. Creating. Remembering.

I realized something…

I don’t miss doing this full time. But I do miss THIS feeling.

And while Gluten-Freedom Bakery is no longer my full-time job, this little business has helped build a life for my kids and me over the past 12 years. It has carried us through seasons of growth, challenge, celebration, and everything in between.

These photos are just a tiny glimpse of that journey — the cakes, the markets, the late nights, and watching my three babies grow up right alongside it all.

So for everyone who has asked about Gluten-Freedom Bakery — I’m still here. I’ll continue taking orders as time allows. It may look different than it once did, but that doesn’t make it any less meaningful.

Thank you to everyone who has supported me since 2014 — whether you ordered once or have been here since day one.

(I’m no longer a vendor here but this place will always be near and dear to my heart)

The Victoria Farmers' Market is also having a blood drive during their market and it looks like the vendors have rallied to help promote our community to give blood.🩸

Almost 2 & 1/2 years ago after delivering my last little one I had some major complications and the first thing I needed was a blood transfusion, 2 units of blood. It didn’t fix all my problems but it gave my body the jump start to the fighting chance it needed to allow me to still be here today.
