We have been getting a lot of questions regarding our ground beef, where it comes from and otherwise. All of our meat products are USDA & domestically sourced here in the United States from Midwestern States like Iowa, Nebraska, and Indiana— this includes our ground chuck, sirloin, pork, and any of our other ground products. Specifically, our ground beef offerings like our chuck or sirloin are ground fresh every morning by our butchers for the finest and freshest quality that you can get using our own specific blends.

We take Boar's Head Turkey Pastrami & Hot Cappi, layer it with their Colby Jack cheese, Arizona Heat Mustard, Shredded Lettuce, Green Pepper, Dill Pickle and Red Onion all on top of delicious Turano Baking Co. It is with a heavy heart that we share that Chuck Wiebe, former butcher & manager, passed away earlier this week. Chuck retired in 2020, but was an integral part of our team for decades with us at Mike’s Market both at our current location, and our old location on Park Boulevard.

He will be missed by many and remembered for his fondness of his family including his children and grandchildren, as well as his love for the northwoods, fishing, and the White Sox. We will post any updates to possible arrangements in the comments on our page here.

Happy Thursday! Labor Day is quickly approaching, and we are getting primed for one last day by the pool. With the end of August coming soon, that also means we will have a brand new Sandwich of the Month—stay tuned for more details on that!

Thank you to everyone that signed up for our Knife Skills and Pork Tenderloin Class! We had a great time educating everyone on different cuts of pork, where they come from, and how to trim your own pork tenderloin. A heartfelt thank you to everyone who joined us last night for our Pork Tenderloin and Knife Skills Class, held in partnership with the Villa Park Parks & Recreation center!

It was a fantastic evening getting to connect with our customers and members of the community and pass along some of our knowledge. We loved sharing how to take care and sharpen your knives, understanding primary cuts of pork and where they are located as well as how they are broken down, and ultimately how to trim and process a pork tenderloin properly for grilling, patties, or tying a classic Butcher’s Knot for bacon-wrapped tenderloin!

Once we are past the holiday season, we are looking forward to more classes over the winter, so be on the lookout for more information!

We also wanted to give a special shoutout to another Villa Park small business, Ink Stitch Studio, who created these awesome new T-Shirts our attendees took home!

Happy Thursday! School is back in session, but don’t let that fool you! We still have a few more weeks of Summer left for the year, along with the Labor Day Holiday, which is quickly approaching! We will be hosting our second knife skills class this coming Tuesday, August 25th and we are so excited to partner again with the Community and the Villa Park recreation Center. This class is full at this time, but we are looking to potentially host some more classes over the winter. Let us know if you are interested in this in the comments!
