Leftover potato peels?

They are pretty darn tasty with a little oil and the TS seasoning of your choice!

These well done beauties have just Seasoned Salt on them (and the aforementioned oil).

The oven was on for the Bountiful B**r Bread anyway, so it made sense to toss them in.

JUST DON’T WALK AWAY, LOL.

On the menu at my house: Chicken Fajita Tacos rice bowls. Or Chicken Fajita Tacos over rice. Not sure which verbiage I like best.

Ingredients
1 tablespoon olive oil
1½ pounds boneless skinless chicken breasts, thinly sliced
2 red and/or green bell peppers, sliced
1 medium onions, sliced
1 cup water
3¾ tablespoons Mom's Favorite Taco Seasoning
12 (6-inch) fajita-style flour or corn tortillas, warmed
Taco toppings such as shredded lettuce, pico de gallo, guacamole, shredded cheese, sour cream

Directions
In large skillet, heat oil over medium-high heat. Add chicken, peppers and onions. Sauté until chicken is cooked through, about 5-6 minutes; drain off liquid.
Stir in water and Mom's Favorite Taco Seasoning. Continue cooking 4-5 minutes or until sauce has thickened.
Serve in warmed tortillas with desired toppings.
Makes 6 servings.

Serve with your favorite Mexican sides.

Make Ahead & Freeze: Combine step 1 ingredients in a gallon freezer bag. Seal well, label and freeze. Thaw completely. Continue with step 1.
