I’m a little late getting to this but I’ve been meaning to make a quick post about potato scab. What is potato scab? It’s the little brown spots you see on the potatoes. It’s caused by a bacteria in the soil. Sounds scary, but it’s actually harmless! It’s totally safe to eat, although the texture may be a bit tougher. You can use a peeler to peel the skin if it bothers you. Conventional farmers would use a pesticide to prevent it. I’m sure there’s other ways to manage it but the organic method I use is to apply sulfur when planting. I think I didn’t put enough or I spread it around too much rather than putting it directly around the seed. Either way, the most recent potatoes I pulled had quite a bit. So CSA members can expect to see some this week with your potatoes in your boxes. I was sure to give you extra though!
