I made a batch ‘just to try’ and they vanished before dessert was even served.
Chilled, tangy center with a thin chocolate shell — the kind of fall treat you quietly hoard.

Ingredients 🧾
3 ounces cream cheese (softened)
1/3 cup pumpkin
1/3 cup confectioners monkfruit sweetener
1/4 cup coconut flour
1 teaspoon vanilla
1/2 teaspoon pumpkin pie spice
1/3 cup Lily's sugar free dark chocolate chips
1 tablespoon coconut oil
sea salt to taste (optional)

Instructions 👩‍🍳
Using an electric mixer, blend the cream cheese, pumpkin, monkfruit sweetener, coconut flour, vanilla extract, and pumpkin pie spice until well combined.
Scoop out a heaping tablespoon at a time and roll into a ball. Place on wax paper and set in the freezer.
While the pumpkin truffles are in the freezer, heat the coconut oil in a double boiler or microwave safe bowl. Add the chocolate and stir until melted and smooth.
Using two forks, carefully dip the truffles in the melted chocolate and place on the wax paper. Sprinkle with sea salt or additional pumpkin pie spice if you prefer. Place back in the freezer for 10 minutes.

Full recipe is in the first comment 👇

Ingredients 🧾
- 1.75 cups all-purpose flour
- 1 teaspoon baking soda
- 0.5 teaspoon salt
- 1 teaspoon ground cinnamon
- 0.5 teaspoon ground nutmeg
- 0.25 teaspoon ground cloves
- 1 cup pumpkin puree
- 0.5 cup vegetable oil
- 2 large eggs
- 1 cup granulated sugar
- 0.5 cup brown sugar
- 1 teaspoon vanilla extract
- 1 cup chocolate chips

Instructions 👩‍🍳
1. Preheat the oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with oil or butter to ensure easy removal after baking.
2. Mix dry ingredients: In a large mixing bowl, whisk together 1 3/4 cups of all-purpose flour, 1 teaspoon of baking soda, 1/2 teaspoon of salt, 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground nutmeg, and 1/4 teaspoon of ground cloves. This will incorporate the leavening agents and spices evenly into the dry mixture.
3. Combine wet ingredients: In another bowl, mix 1 cup of pumpkin puree, 1/2 cup of vegetable oil, 2 large eggs, 1 cup of granulated sugar, 1/2 cup of brown sugar, and 1 teaspoon of vanilla extract. Use a whisk or mixer until the mixture is smooth and well combined.
4. Blend wet and dry ingredients: Gradually add the dry ingredients to the wet mixture. Gently fold the dry ingredients into the liquids until just combined; be careful not to overmix, as this could result in a dense texture.
5. Add chocolate chips: Fold in 1 cup of chocolate chips until evenly distributed throughout the batter. This will give bursts of chocolatey goodness in each slice of the bread.
6. Pour into the pan: Scrap the batter into the prepared loaf pan, spreading it evenly. It should settle smoothly into the pan.
7. Bake: Place the loaf pan in the preheated oven and bake for 55-65 minutes. The bread is done when a toothpick inserted into the center comes out clean, with no batter sticking to it.
8. Cool and serve: Once baked, remove the pan from the oven and allow the bread to cool in the pan for about 10-15 minutes. Then, transfer it to a wire rack to cool completely before slicing. Enjoy your warm pumpkin chocolate chip bread!

Tonight's craving: golden butter, toasted pecans, and pillowy ravioli—pure comfort.
Browned butter brings nutty depth and a cozy crunch that hits different 🧈

Ingredients 🧾
- 1 package butternut squash ravioli (12-15 oz)
- 1/4 cup unsalted butter
- 1/2 cup chopped pecans
- 1/2 tsp fresh sage (or 1/4 tsp dried)
- Salt & pepper to taste
- Grated Parmesan for serving
- Optional: sprinkle of cinnamon

Instructions 👩‍🍳
1. Cook the ravioli: Begin by bringing a large pot of salted water to a boil. Add the ravioli and cook according to the package directions, typically around 4-5 minutes or until they float to the surface. Once cooked, drain and set aside.
2. Melt the butter: In a large skillet, melt the butter over medium heat. Keep an eye on it, as you want to achieve a golden brown color without burning.
3. Toast the pecans: Add the chopped pecans to the skillet, stirring them frequently until the butter turns a rich golden brown and the pecans are nicely toasted. This should take about 3-5 minutes.
4. Add seasoning: Stir in the sage, salt, and pepper, allowing them to infuse their flavors into the butter and nuts. Cook for an additional minute.
5. Combine with ravioli: Gently add the cooked ravioli to the skillet, tossing them in the brown butter sauce until they are well coated. Make sure to handle them gently to preserve their shape.
6. Garnish and serve: Serve the ravioli hot, topped with freshly grated Parmesan and a sprinkle of cinnamon if desired. Enjoy immediately!

Craving that warm, cinnamon-scented comfort from the oven? 🍎
Buttery topping and tart Granny Smiths make it perfect with a scoop of vanilla. 🍨
Full recipe is in the first comment 👇

Ingredients 🧾
- 10 cups Granny Smith apples (about 7-8 apples)
- ½ cup light brown sugar (for filling)
- ⅓ cup all-purpose flour (for filling)
- ¼ cup granulated sugar
- 2 tsp ground cinnamon (filling)
- ½ tsp ground nutmeg
- 1 tsp vanilla extract

Topping:
- 1⅓ cups quick-cooking oats
- 1⅓ cups all-purpose flour
- 1 cup light brown sugar (topping)
- 1½ tsp ground cinnamon (topping)
- ½ tsp salt
- ½ tsp baking powder
- ¾ cup unsalted butter (melted)

Instructions 👩‍🍳
1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with non-stick spray to prevent sticking.
2. Slice the Granny Smith apples. In a bowl, combine ½ cup light brown sugar, ⅓ cup flour, ¼ cup granulated sugar, 2 tsp cinnamon, ½ tsp nutmeg and 1 tsp vanilla extract with the sliced apples. Gently fold until the apple slices are thoroughly coated — the flour helps thicken the juices during baking.
3. Spread the apple mixture evenly in the prepared baking dish so the slices cook uniformly.
4. For the topping, mix 1⅓ cups quick-cooking oats, 1⅓ cups all-purpose flour, 1 cup light brown sugar, 1½ tsp cinnamon, ½ tsp salt and ½ tsp baking powder. Add ¾ cup melted unsalted butter and stir until the mixture is crumbly and evenly combined.
5. Sprinkle the crisp topping evenly over the apples.
6. Bake in the preheated oven for 40–45 minutes, until the topping is golden brown and the filling is bubbly. Check halfway to avoid over-browning.
7. Allow the dish to cool about 5 minutes before serving so the filling sets slightly.

Autumn in a bowl — sticky-sweet kernels that vanish faster than you can say "one more" 🍁🍿
The caramel clings to every bite for that perfect sweet-salty crunch. Full recipe is in the first comment 👇

Ingredients 🧾
- 10 cups popped popcorn
- Salt to taste
- 1 cup butter
- 1 cup brown sugar
- 2 tsp vanilla
- 1/2 tsp baking soda
- Mini/Regular Rolos
- M&M’s (brown, yellow, red, orange)
- Pretzel M&M’s

Instructions 👩‍🍳
1. Pop the Popcorn: Start by popping 10 cups of popcorn. You can use an air popper or stovetop method. Once popped, sift through and remove any unpopped kernels. Generously sprinkle salt over the popcorn, to taste.
2. Prepare the Caramel Sauce: In a large saucepan, melt 1 cup of butter over medium heat. Once fully melted, add 1 cup of brown sugar and stir the mixture until it’s well combined.
3. Boil the Mixture: Allow the mixture to come to a low boil without stirring. Then, let it boil for 4 minutes. This is crucial for achieving the right caramel consistency.
4. Add Vanilla: After four minutes, remove the pan from heat. Stir in 2 tsp of vanilla, giving it a good mix.
5. Incorporate Baking Soda: Now it’s time to add in 1/2 tsp of baking soda; be cautious, as the mixture will foam up significantly. Stir until fully mixed.
6. Combine with Popcorn: Drizzle the caramel sauce over your salted popcorn. Gently fold the popcorn with a spatula or wooden spoon until it is evenly coated with the caramel.
7. Cool and Add Candy: Spread the caramel-coated popcorn onto a lined baking sheet. Let it cool for a few minutes until it's set, then sprinkle with your choice of Mini/Regular Rolos and M&M's.
