DEL SOL Chocolate is a creative expression for me, it is done out of great love and respect for the Food of the Gods, Theobroma cacao. My chocolate is carefully crafted from the bean, utilizing the highest quality ingredients to maximize flavour, health benefits, and enjoyment. Batch # 148 in the works. Cacao: Maya Mountain Coop, from the Toledo District in Belize, a group of over 300 smallholder farmers with a mission of growing prosperous farming communities. Maya Mountain has a strong vision of social and environmental development, promoting reforestation and encouraging organic, sustainable agroforestry. Most of the farmers are Q'eqchi' and Mopan Maya, and rely upon cacao as their main cash crop to support their families.
This has been my favorite cacao to work with, as it has complex flavors, a real brightness that sends aromas of grape and cherry as it whirrs away in the melanger!
I hope you will pick some up soon at the Viroqua Food Coop, W***y St Coops, and Peoples Coop, among others. Your purchases are greatly appreciated, for they also support my family as well. :)

Feeling like a proud mama, sending off my chocolate creations to San Francisco this morning; entering three bars into the Good Food Awards!! Three of my favorites: 70% Dark with Alto Beni, Bolivian beans; 70% Maya Mountain, Belize; and a Maple Sugar sweetened, (from Maple Valley Coop), 70% that has a special blend of beans. I am getting ready to begin Batch # 138, which will be a blend of two beans, originating from Hispaniola, and sweetened with Maple Valley Coop's maple sugar. For this deliciousness, I am combining a Dominican bean, from OKO Caribe, a group of small holder farmers in the San Francisco de Macoris region of the Dominican Republic, with one from Haiti. PISA, a group of 1500 cacao farmers in northern Haiti, includes 400 women farmers.

One of the important factors in choosing the cacao for Del Sol Chocolate is the impact on families and communities, and especially the empowerment of women. Maya Mountain Cacao of Belize is a certified Organic Coop in southern Belize, and I am proud to be crafting some fine chocolate with the cacao grown by these dedicated farmers.

They are made with organic powdered coconut milk, and cacao from Maya Mountain in southern Belize, an organic coop of 300 indigenous Mayan farmers. .......here you will find a fresh batch of maple sugar sweetened Del Sol Chocolate!

I will be sampling batch #124 Saturday at W***y St. Coop West in Middleton, from 10 a.m. to 1 p.m. This is a wonderful blend of Dominican cacao, coming from La Red Guaconejo Coop and maple sugar from Maple Valley Coop, located in Cashton, WI. The chocolate has a rich nuttiness, subtle vanilla, and maple overtones, and of course.......is made with lots of love!
