The real secret is a gentle simmer. At Pho 3B & More, our broth never comes to a rolling boil. Instead, we keep the heat low so it slowly releases the natural sweetness from the bones. During the first hour, we carefully skim the foam again and again to create a clear, clean, and flavorful broth.
