Let’s be honest: the man does not need another novelty mug, a pair of grilling tongs, or a polyester tie he’ll pretend to love before burying it in the back of the closet.

What he actually deserves is a heartfelt "thanks for putting up with me all these years" and a damn good drink.

The Classic Daiquiri Recipe

There is a massive difference between a drink that hides under a pile of sugar and a cocktail that stands on its own merits.

Case in point: The classic Daiquiri.

If your only memory of a daiquiri involves a neon-blue slushie machine at a spring break resort, let us reintroduce you to the real thing. It requires exactly three things: crisp lime, simple syrup, and a truly exceptional white rum. Because there are no loud mixers to hide behind, the spirit has to be flawless.

That’s why we craft our White Rum entirely in-house right here in Vista.

Here's a basic recipe for a classic Daiquiri:

- 2 oz 117 West Rum
- Ÿ oz simple syrup
- Ÿ oz lime juice

Launching June 4th (National Moonshine Day) - The Launch of Irish PoitĂ­n

Before there was whiskey, there was Poitín (pronounced put-cheen). Long before Irish whiskey ruled the world, this original Irish white spirit was being illicitly distilled in small pot stills across the Irish countryside. Outlawed in 1661, it spent over three centuries in the shadows as Ireland’s legendary, rebellious moonshine.

Naturally, we thought it belonged right here in Vista.

This Thursday, June 4th, which also happens to be National Moonshine Day, we are releasing our own first-of-its-kind, Vista-distilled PoitĂ­n. Our Master Distiller, Justin McCabe pulled out all the stops for this one. The nose is soft and pillowy with an alluring sweetness. On the palate, you'll get rich molasses supported by smooth cereal notes of wheat and oats that beautifully round out the mouthfeel... right before the 112-proof kick hits your chest.

Let's call it what it is: Not so much a Kentucky Hug as an Irish Slap. đŸ‘‹đŸ’„

How to drink it: It tastes incredible with a splash of lemon juice and topped with ginger beer.

This weekend, we’re opening the vault. From Thursday to Saturday in the Speakeasy, take 20% off ALL bottles, including the rare ones that rarely see the other side of the bar.
