Birria is a Mexican dish of slow-cooked, stewed meat, traditionally goat but now commonly beef, lamb, or other meats, marinated in a chili-based adobo sauce and spices. It originated in Jalisco, Mexico, and is served either as a rich, flavorful soup called consomé de birria or as tacos and quesabirria, where the meat is dipped in the consomé and cooked on a griddle with cheese.
