All I had was a box yellow cake mix and I really wanted a good cake. So I read on the internet what I could do with it. I tried what some suggest. I made buttermilk (1 tablespoon of white vinegar per cup of milk, then wait ten minutes after stirring) and added it instead of water, and added an extra egg to the mix. I mixed the cake in the mixer just long enough to blend in all the ingredients. The cake had a much better texture and was great. It was moist. So much better. My husband who does not like cake much, loved it! Even commented it tasted like homemade! So try it. Your family will love the cake!

I heard on CBS news that the most popular pie on the Thanksgiving Holiday was the Cranberry Apple Pie. Never heard of it! In fact most on the news show had never heard of it. So you know me, had to look it up and bake it! Folks....It is the best Pie I have ever put my mouth on! This comes from a person who does not really like Cranberries! I also do not really like a lot of pie! Oh my gosh this pie is good. It tastes like a tangy, sweet pink apple pie. The cranberries are sweet and I do not taste them in the pie. The cranberries taste more apple to me. My husband who hates anything really sour, loves it! He says he tastes the cranberry, but he loves the tart vs sweet. So there you go! Whatever you do TRY THIS PIE! I have a feeling your family will love it! I can see why it is the most popular pie in the US on the Holidays!
Now here is a few tips before you even get started . Use a deep dish pie plate with a high lip over the crust. This pie is juicy and big so you will need the big 9 inch deep dish pie plate!! Do put a cookie sheet that will hold in juice that spill over the pie, just in case. Your oven will thank you! Now lets make this pie!

Cranberry and Apple Pie 8 servings
(I did play with the recipe so it is mine)
2 cups sugar
1/2 cup of corn starch ( I coated all the fruit with lots of it and still
had juicy juice. I like more of a thick
sauce so I included a bit more here.)
1/4 cup orange juice
1/2 teaspoon ground cinnamon
1/2 teaspoon apple pie spice (Google and make your own)
1/8 teaspoon ground nutmeg
1/4 teaspoon lemon juice
4 cups sliced, peeled Granny Smith apples.(I used small bag)
2 cups fresh or frozen cranberries ( I used fresh 6 oz bag.)
3 tablespoons butter
double -crust pie pastry
In a large bowl, combine all ingredients, but pastry and butter . Toss gently. Line the 9 inch deep dish pie plate with the bottom pastry. Add filling and dot with butter. Fit top of pastry on pie and cut vents, flute and seal. Bake at 350 for 60 minutes until crust is golden brown and the filling is bubbly.
Oh yummy!!!! Like I said! This is a great pie! Enjoy! Again do not be afraid of the cranberries. It really is great in this pie!

I was asked to share my Cornbread dressing from the "Byrum Family Cookbook" sold by Amazon. This is how my Grandmother Byrum made dressing and how my Mom learned to make dressing from her.

Cornbread Dressing!

You will need to double the recipe for most cornbread recipes because you will want a 13 X 9 pan full. Once you have baked the cornbread, let it cool. In a roaster, crumble the cornbread. You can do this a day or two ahead and allow the cornbread to dry out a bit. Use 1/3 to a 1/2 of a loaf of white bread. Crumble it up into small pieces and place in the roaster with the cornbread. Mix it up. It should look like an even blend of yellow and white bread. This can be made several days in advance and allowed to dry out or you can freeze this until you are ready to make the dressing. The day before{ or several days before because you can freeze this too) chop 3 to 4 onions and an entire stalk of celery. Cook in large pan covered in chicken broth until veggies are tender. Store in refrigerator. The day you wish to make the dressing, place all the corn and bread crumbs, chicken broth with celery and onions in roaster. Mix up with 3 to 4 raw eggs and 1/2 cup of milk(can leave out milk). Add sage to taste and salt and pepper to taste. (I add sage and pepper but no salt). Mix well. You may need to add more chicken broth because this dressing should be very moist and have the consistently of thick cake batter. Bake at 350 degrees until brown and you can insert a knife in the center and it comes out clean. This may take an hour or a bit more. Now I have learned from a seasoned cook that you can even mix up the dressing and place it in casserole dishes and freeze it. Then when you need it, get out what you need for the holiday and thaw in the refrigerator and cook the day you need it. That would be great too! How to bake a Turkey! Ok, I know a lot of people are going to tell you a lot of things. Here is what I am going to tell you and I have NEVER cooked a dry turkey! Start with a thawed turkey, rinsed inside and out and make sure all the giblets are out. Rub the turkey in Olive oil (or shortening) inside and out. Salt and Pepper good inside and out. Make sure you have a meat thermometer and put it in the meaty part of the bird. Make sure It is not touching a bone. DO NOT SKIP THAT STEP! Live by that temp. Cover the bird with foil until the last ten minutes it you want brown skin. (Can even use butter on top of bird that last ten) Bake at 350. After one hour start checking that temp. I will then check 30 minutes later. The closer it gets to 165 degrees the more you check because the second it hits 165 you take that bird out!!!! Put the foil back on and let the bird cool. I always like to cook my bird a week before and take the meat off the bone. I put the dark meat in a oven/freezer bowl and the white meat in another oven/ freezer bowl. I then cover the meat with chicken broth. (I use the can broth along with some of the broth in the roaster.) I then freeze the meat. Two days before Thanksgiving, defrost in icebox or defrost Thanksgiving in the microwave. Just watch it. Heat with broth and eat! You can leave in bowls with broth or put meat in a platter. Now do not waste the broth! You can make gravy with a little of it and the rest makes great soup or noodles with some turkey left overs! Yummy!!!!
If you are cooking a turkey breast, I would do it the same way except I might baste the bird with some juices. White meat is very dry and I would really read how long the butcher suggest you cook the breast and watch that temp!!!!. You will get a nice juicy breast! When it is just my husband and I, I often cook a turkey roast with with white and dark meat. It is the entire bird just with the bones removed. It is easy to cook and more than enough for us.

Every year someone would run up to me at the grocery store and ask me to repeat my dressing recipe or ask me how they could add sausage or something else to the recipe. Once you get the recipe down, it is fun to make it yours and put some things your family would like into it, like sausage!

I found two great and easy cookie recipes on line and I would like to share them with you. My husband and friends love them.

Flourless Peanut Butter Cookies
makes 4 dozen

2 large eggs, beaten
2 cups gradulated sugar
2 cups creamy peanut butter

In a large bowl, mix all ingredients. Roll levels tablespoons in balls and place on an ungreased baking sheet. Flatten balls with a fork. Bake at 350 degrees for 18 minutes. Remove to a wire rack to cool.

Almond Joy Cookies

makes 3 dozen

1 14oz. bag of sweeten coconut flakes
2 cups semi sweet chocolate chips
2/3 cups chopped lightly salted almonds
1 14oz can sweetened condensed milk regular or fat free will work

Preheat oven at 325 degrees. Line a large baking sheet with parchment paper and set aside. In a large bowl combine coconut, chocolate chips, almonds, and sweetened condensed milk. Stir to combine. Scoop out dough with cookie scoop onto prepared baking sheet. Moiten the tips of fingers with water and shape into discs. Pat the tops flat. Bake cookies for 12 to 14 minutes or until tips of coconuts are just starting to turn golden brown. Let cookies cool on baking sheet. Store cookies in an airtight container.

Important note to recipe * Parchment paper is critical for these cookies to turn out right. Silcone mats, waxed paper,etc, will yield a slightly different result.

These two cookie recipes are simple and wonderful. Have a good time baking and eating them.

I saw a recipe like this on facebook, but I made so many changes to it. I made it my own. Serve it with a salad You can make it in a 9 X13 pan or smaller. I made mine in one half that size and it could have served 6 because it was so thick, but you may want yours a lot thinner. If you do, you may need more biscuits or pizza bread.

Tricia's Pizza Casserole
Spray a you pan with a non stick spray. (I used a glass square freeze/ baking to table pan) On the the bottom and the sides of the pan, line it with a can (or two depending on the size of pan) with some flaky can biscuits. Try to divide the biscutis inbetween the flakes to get them thin. The biscuits will puff up a lot! I got four pieces per biscuits. Make sure to spread biscuits to cover any holes to form crust. Put in oven and bake for 10 minutes. Meantime, brown a pound of ground meat with about 1 to 2 teaspoons of Italian seasoning. Now is the time you can also add some toppings you like on pizza, too. I like onions, sweet peppers, and mushrooms. I added them, toward the end of the browning to get the vegetables soft. I then added some very chunky pasta sauce and took out my biscuit crust and allowed it to cool a bit. I simmered the pasta sauce to allow it to get a bit thicker while I added more of my favorites like pepperoni, cooked sausage, Can. bacon, and black olives. After about ten minutes when I was happy that all the flavors were cooked togetherand my sause was nice and thick. I spooned in 90% of my thick sauce into the crust. I then put a nice thick layer of graded parmesan cheese I then put the rest of my biscuits in 4ths on the top of my cassrole and spread a layer of sauce, Parmaesan cheese, Olives, and a thin layer regular mozzerarella cheese. Now place the casserole in the oven and let back for about 30 minutes or until the top biscuits are done and casserole is bubbly. Now put on a thick topping of Mozzarella cheese and allow it to stay in the oven for about three more minutes and take it out. You just want that cheese to melt on the top. Serve. It will taste like a deep dish pizza. Yummy!!!!!
NOTE: You could use pizza bread in a tube, but I would bake it just like I did the biscuits and you might want to use bread crumbs or bake the bread on the top layer then add the sauce, olives and cheese. You do not want to eat yeast raw dough! Quick ride to the emergency room because it will rise in the stomack!( At least I have always been warned)

Our Story

I have written a cookbook that sells on Amazon and has now become quite popular in Europe. I am writing another book, but it is not about cooking. It is about the early days of Texas and the settlement of Six Shooter Junction which is now known as Waco, Texas through my fictional characters the Mac Daniels. Two brothers who came here to find a kind of personal freedom they could not find in Tennessee on the Plantation. One had a Daughter Nina, who would end up saving the young town of Belton and would be come a dime store book legend from Six Shooter Junction!
