Back to my One Bake Two Ways mini-series with one of my all time faves from the chapter ‘Sweeter Things’ - these are my Any Berry Crumble Bars with Almond Shortbread and Vanilla Custard. I forgot to record a voiceover for this reel so pretend I’m yapping some nonsense over it ok?⁣

This delightful little bake is a real three in one sorta number. Each component works great on their own but smushed and layered up on top of each other and you’ve got yourself a real slice of heavenly nice ✨⁣

In truth, I can easily smash a whole tray of these to myself but if, unlike me, you have that thing called self-restraint, then they make for a great snack post brekkie, pre lunch, post lunch, pre dinner, post dinner or as a midnight snack. It’s banging both hot or cold and if you couldn’t tell I BLOODY LOVE IT. ⁣

🌍🍰 Around The World in 80 Cakes - Swedish Midsommartårta aka Midsummer Strawberry Cake 🍰🌍⁣⁣⁣⁣⁣

And just like that folks, we are back in business with cake number 36, this time in Sweden with a little berry laden number.⁣⁣
⁣⁣⁣⁣⁣
It’s safe to say this video is sugar fuelled chaos and I apologise for how verbal vomitty it is. I blame the mild hysteria from baking in what is essentially a sauna. The past week has proven yet again, that I am indeed not a Summer (in the uk) girly 🙅🏽‍♀️⁣⁣⁣⁣⁣

The cake is made up of 3 layers of soft, sumptuous, moist sponge, topped with fresh whipped cream, strawberries and occasionally layers of pastry cream - which obv, I went for cause I’m bougie 💅🏽 ⁣⁣⁣⁣⁣
⁣⁣⁣⁣⁣
If you fancy giving this cake a go (even if you don’t make the whole shebang, individually each component is lovely), you will need:⁣⁣⁣⁣⁣
⁣⁣⁣⁣⁣
• Strawberry Filling⁣⁣⁣⁣⁣
650 g Strawberries, fresh or frozen⁣⁣⁣⁣⁣
65 g Caster Sugar⁣⁣⁣⁣⁣
Pinch of Salt⁣⁣⁣⁣⁣
• Sponges⁣⁣⁣⁣⁣
275 g Baking Marg/Unsalted Butter, room temp⁣⁣⁣⁣⁣
330 g Caster Sugar⁣⁣⁣⁣⁣
5 Large Eggs⁣⁣⁣⁣⁣
300 g ‘00’/Plain/AP Flour, sifted⁣⁣⁣⁣⁣
70 g Potato Starch, sifted⁣⁣⁣⁣⁣
15 g / 3.5 tsp Baking Powder, sifted⁣⁣⁣⁣⁣
Pinch of Salt⁣⁣⁣⁣⁣
1 tsp Vanilla Bean Paste⁣⁣⁣⁣⁣
2 tsp Almond Extract⁣⁣⁣⁣⁣
125 ml Buttermilk, room temp⁣⁣⁣⁣⁣
• Soaking Syrup, optional⁣⁣⁣⁣⁣
100 ml Water⁣⁣⁣⁣⁣
1 tsp Almond Extract⁣⁣⁣⁣⁣
80 g Caster Sugar⁣⁣⁣⁣⁣
• Pastry Cream Filling⁣⁣⁣⁣⁣
250 ml Whole Milk⁣⁣⁣⁣⁣
1 tsp Vanilla Bean Paste⁣⁣⁣⁣⁣
3 Egg Yolks⁣⁣⁣⁣⁣
50 g Caster Sugar⁣⁣⁣⁣⁣
10 g Cornflour, sifted⁣⁣⁣⁣⁣
10 g Plain Flour, sifted⁣⁣⁣⁣⁣
• Whipped Cream⁣⁣⁣⁣⁣
450 ml Double/Whipping Cream⁣⁣⁣⁣⁣
40 g Icing Sugar ⁣⁣⁣⁣⁣
1tsp Vanilla Bean Paste⁣⁣⁣⁣⁣
• To Finish⁣⁣⁣⁣⁣
Fresh Strawberries ⁣⁣⁣⁣⁣

🌍🍰 Around The World In 80 Cakes - Balkan Ledene Kocke aka Ice Cube Cake 🍰🌍⁣⁣

So sure, I definitely have gone off piste and made a cake which wasn’t on the list but considering I’m currently in Montenegro , I decided to break the rules and make a popular cake from here instead. ⁣⁣
⁣⁣
And I am SO glad I went rogue because this cake is such a crowd pleasing, easy going, easy to make, easy to eat and easy to demolish sorta cake. I’m talking a lighter than air choccy sponge drenched in a sugar syrup with a custard buttercream on top and finished with a chocolate top. Make it and make it instantly. ⁣⁣
⁣⁣
Tweaks I made:⁣⁣

• Adapted the sponge recipe by swapping out the Plain flour for 00 Flour for a super light, airy sponge ⁣⁣
• Used an 8 x 12 inch deep tin and baked the sponge for 22 minutes (any more and it would have been fairly overbaked)⁣⁣
• I don’t like peppermint as a flavour and using extracts or essences can have a synthetic/overly fake taste so swapped it out for fresh mint leaves in the custard (about 5 or 6) and added to the milk when bringing to boil to let the leaves steep
• Idk what vanilla sugar is so swapped it out for about 15g icing sugar and another drop of vanilla bean paste⁣⁣
• Increased amount of chocolate in the topping from 100g to 175g and used milk chocolate so it was sweeter and not bitter ⁣⁣
⁣Suggestions for next time:⁣⁣⁣⁣
⁣⁣⁣⁣
• Give the cake plenty of time to chill and set in the fridge for a clean slice - i think this cake frozen through would be a GREAT summer cake as that custard buttercream has melty ice cream vibes at room temp⁣⁣
• I would for sure ripple through a fruit purée or compote into the custard. Raspberries, Passionfruit, holy crumbs MANGO, would be killer. Yum yum yummity yum ⁣⁣
• The topping sets separate to the custard so slip and slides off if eaten at fridge temp so opt for a ganache based chocolate drizzle for a more cohesive finish⁣⁣

Just some family friendly filth gracing your feed this eve with my Triple Threat Chocolate Cake. It’s made up of:⁣

❤️‍🔥 Chocolate Sponge⁣
❤️‍🔥 Chocolate Mousse ⁣
❤️‍🔥 Chocolate Ganache ⁣

If you don’t like chocolate, chances are you won’t like this but also I ask - who are you and are you okay??! ⁣

The sponge is baked in 20 minutes, mousse is made in 10 and the ganache is finished in 5. Easy peasy chocolate squeasy 😬 ⁣

I’ve shared a Plant Based version of this a while back but both 10 outta 10 recipes are in tomorrows newsletter, alongside the recipe card for my Persian Love Cake. ⁣
