🌍🍰 Around The World in 80 Cakes - Swedish Midsommartårta aka Midsummer Strawberry Cake 🍰🌍
And just like that folks, we are back in business with cake number 36, this time in Sweden with a little berry laden number.
It’s safe to say this video is sugar fuelled chaos and I apologise for how verbal vomitty it is. I blame the mild hysteria from baking in what is essentially a sauna. The past week has proven yet again, that I am indeed not a Summer (in the uk) girly 🙅🏽♀️
The cake is made up of 3 layers of soft, sumptuous, moist sponge, topped with fresh whipped cream, strawberries and occasionally layers of pastry cream - which obv, I went for cause I’m bougie 💅🏽
If you fancy giving this cake a go (even if you don’t make the whole shebang, individually each component is lovely), you will need:
• Strawberry Filling
650 g Strawberries, fresh or frozen
65 g Caster Sugar
Pinch of Salt
• Sponges
275 g Baking Marg/Unsalted Butter, room temp
330 g Caster Sugar
5 Large Eggs
300 g ‘00’/Plain/AP Flour, sifted
70 g Potato Starch, sifted
15 g / 3.5 tsp Baking Powder, sifted
Pinch of Salt
1 tsp Vanilla Bean Paste
2 tsp Almond Extract
125 ml Buttermilk, room temp
• Soaking Syrup, optional
100 ml Water
1 tsp Almond Extract
80 g Caster Sugar
• Pastry Cream Filling
250 ml Whole Milk
1 tsp Vanilla Bean Paste
3 Egg Yolks
50 g Caster Sugar
10 g Cornflour, sifted
10 g Plain Flour, sifted
• Whipped Cream
450 ml Double/Whipping Cream
40 g Icing Sugar
1tsp Vanilla Bean Paste
• To Finish
