Those rice bags are heavy! 🌾
Just another day at our sake brewery in Hawaii. Autumn is harvest season, and as winter approaches, our sake-making days will get busier.

Today, we’re moving rice bags and checking the condition of the rice. We’re also steaming a small test batch to see how it behaves and plan for the brewing ahead.

International Sake Day celebrations are taking place around the world. 🍶🌎
Here in San Francisco, local brewery Sequoia Sake poured its wasabi-flavored sake, while Den Sake served sake dressed in yukata.
Islander Sake was there as well, sharing several different sakes brewed with the water and air of Hawaii. 🌺🍶

We are honored to share that our Junmai Daiginjo YUI received a Gold Award at the 4th Bishu Concours 2026 Miyagi Competition.

This award is especially meaningful to me because the judging panel was made up entirely of women from around the world. As a female Toji, I am deeply grateful that a sake I brewed was recognized by such an international group of judges.

I am also proud that a sake brewed in small batches on a southern island in Hawai‘i could be recognized on this stage.

We will be pouring YUI at Sake Day San Francisco on September 26 and at the San Diego Sake Festival on September 27.

Sushi Hideo took us into downtown Hilo for a fun little discovery.

The owner told us it took seven years to find this location. They are not serving alcohol at the restaurant at the moment, so sake is BYOB.

One dish that really stood out was the Baked California Roll. The aroma somehow reminded us of okonomiyaki, which made it especially fun. I immediately thought it would pair beautifully with our Islander Sake Junmai Daiginjo YUI. 🍣🍶

If you are looking for Islander Sake in Hilo, you can find it at Hilo Bottle Shop and Kadota Liquor. Pick up a bottle and bring it along to Sushi Hideo.

Reservations are through Yelp, rather than OpenTable.

For us, this visit to Hilo was a wonderful surprise. The restaurant is in a lively part of downtown, with places like Pineapples Restaurant nearby and plenty of visitors passing through.

Now all that is missing is a bottle of Islander Sake. 🌺

Today marks the final stage of koji making — Dekoji.

Koji is at the heart of sake brewing, where rice, microorganisms, temperature, and time all come together.

Here in Hawai‘i, surrounded by the natural beauty of Mauna Kea, we continue this centuries-old Japanese tradition — carefully watching, touching, and listening to the koji as it develops.

From these tiny living microorganisms begins the transformation of rice into sake.

Japanese tradition, Hawaiian nature, and the quiet work of fermentation.

A wonderful day at the Craft Sake Festival in Los Angeles.

It was a great opportunity for us to pour our sake, meet so many people, and hear their reactions directly.

One thing became especially clear to us throughout the event: American sake drinkers are developing their own tastes and are often looking for something different from what is traditionally preferred in Japan.

That is exciting for us.

At Islander Sake Brewery, we believe that sake made in Hawaii can respond to those changing tastes while still respecting the craftsmanship and traditions of Japanese sake brewing.

The weather also seemed to be on our side. Saturday, the day of the festival, gave us beautiful clear skies. By the following day, heavy rain had settled over Los Angeles.

Perhaps the gods of weather and sake were looking after us.

Thank you to everyone who stopped by, tasted our sake, shared your thoughts, and spent part of the day with us.

From Hawaii, we continue to explore what sake can become.

A new version of our passion fruit sake, created in Hawai‘i and soon making its way to the Mainland.

The new label was designed by artist Akira Satake Akira Satake.
He captured a Hawai‘i sunset and passion fruit vines swaying in the fresh island breeze, expressed through the silhouette of palm trees. We love how beautifully he turned the feeling of Hawai‘i into art. Mahalo, Akira san!

And, of course, the lilikoi itself is just as special.
The fruit is lovingly grown by Mike Nakamura Nakihalani Farm here in Hawai‘i.

From the farmer, to the artist, to our brewery—
this bottle is a little piece of Hawai‘i. 🌺

Yesterday’s eruption may have come to an end as part of the crater wall collapsed, but volcanic haze is still drifting across our side of the island, painting the sunset a deeper shade of red. 🌋🌅

Living on Hawaiʻi Island means experiencing the incredible power and beauty of nature every day. And in the middle of it all, we’re honored to brew sake that reflects this remarkable place. 🍶✨

Yesterday, we had the privilege of joining the Tanabata Festival at a senior community on Hawaiʻi Island.

Before the celebration began, our Brewmaster, Dr. Chiaki Takahashi, shared a message about Tanabata.

“Last night, the Milky Way was clearly visible over the skies of Hawaiʻi Island. According to Japanese tradition, Tanabata is the one special night each year when Orihime and Hikoboshi are reunited across the Milky Way. It is a great honor for us to celebrate this beautiful tradition together with all of you by raising a toast with our sake and non-alcoholic amazake.”

Following the toast, the room came alive with taiko drumming, Bon dance, smiles, and laughter. It was a joyful reminder that traditions become truly meaningful when they are shared across generations and communities.

At Islander Sake Brewery, we believe our mission is not only to brew sake, but also to carry over 2,000 years of Japanese culture to the southernmost islands of Hawaiʻi—one meaningful gathering at a time.
