First attempt at a Salmon Burger.
Initially it was a total pain with how wet it was, thankfully though after a night in the fridge they came together a bit more, and came out amazing on the flat top.
Grilled buns with a touch of garlic butter, some spring mix, a couple red onions, fresh mozz and some lemon thyme aoili. π€€π€€π€€π€€
Catfish burgers were definitely a bigger hit, due to the spice from the cajun and its natural buttery-ness.
But they both went better than expected and both had their minor issues. (Catfish was easier to work with, but wanted to stick more to the pan/flatop. Salmon was super wet and sticky making it hard to mix and form into patties. Parchment paper was handy for both types of burgers.)
