First attempt at a Salmon Burger.
Initially it was a total pain with how wet it was, thankfully though after a night in the fridge they came together a bit more, and came out amazing on the flat top.
Grilled buns with a touch of garlic butter, some spring mix, a couple red onions, fresh mozz and some lemon thyme aoili. 🀀🀀🀀🀀

Catfish burgers were definitely a bigger hit, due to the spice from the cajun and its natural buttery-ness.
But they both went better than expected and both had their minor issues. (Catfish was easier to work with, but wanted to stick more to the pan/flatop. Salmon was super wet and sticky making it hard to mix and form into patties. Parchment paper was handy for both types of burgers.)

Black and White Truffle oils, as well as all the best of seasonings.
A bunch of lettuce(too much) in place of a roll.
Layered with Yellow heirloom tomato slices, sliced red onion, Sharp Cheddar, and provolone.
Burgers topped with a slice of sharp Cheddar and provolone.
8/10... Lettuce worked quite well, though I used too much of it. It was a bit awkward trying to hold, while eating the burger, as my lettuce to meat ratio was off by a bunch and I didn't think the lettuce would hold as well as it did. Burgers definitely need more truffle oil, as the flavor was very mild, despite how strongly it smelled initially. Beyond that, lettuce was nice and Crispy, held better than expected, and per usual, burgers were super juicy, tender and FLAVORGASMIC!

Piedmontese Beef
Little Olive Oil, Basil, Thick slices of Beef Steak Tomatoes, and White Balsamic Reduction.
This version came out so much better now that I properly seasoned the meat.
