Colby and Lois Whitcomb purchased their farm in 1951 and through the years have built a heritage of productive vibrant cows and high quality milk. In the early years of the farm Lois and Colby grew a market garden, had an egg delivery route and sold sides of beef and lamb alongside sales of their milk. The grandkids, Carrie and Holly Whitcomb have returned to the farm and are taking it back to its

roots by direct marketing products to the community raising pastured beef, pork and rose veal. In 2015 Carrie started her own small creamery and makes a variety of cheeses that highlight the high quality milk of the Jersey and Guernsey cow. We offer our meats and cheese at the following farmers markets:

Camden Farmers’ Market – Saturdays 9:00am to 12:00pm

Our Story

Colby Whitcomb grew up on the Birches Road in Waldo, Maine, where he was raised on his family’s farm, the original Whitcomb homestead purchased in 1917. Colby grew up raising steers and pigs while his parents, Eben and Nellie Whitcomb, milked cows and made butter. In 1951, soon after marrying his wife Lois, who grew up raising Guernsey cows in Chesterville, Maine the pair purchased the property next door to where Colby grew up and named it Springdale after the many springs bubbling up out of the ground throughout the property. Through the years they built a heritage of productive vibrant Jersey and Guernsey cows and high quality milk with the help of their five children. In the early years of the farm Lois and Colby grew a market garden, had an egg delivery route and sold sides of beef and lamb alongside sales of their milk. The grand kids, Carrie and Holly Whitcomb returned to the farm in 2011 and are taking it back to its roots by direct marketing products to the community much like their grandparents.

Cheese. We are excited to introduce our line of artisan cheeses. Carrie has had a passion and vision for transforming the farm’s luscious, creamy milk into cheese for years. Jersey and Guernsey milk, boasting the richest butterfat content of the dairy breeds, is perfect for making into such creamy, delectable cheese. Our Cream Cheese is versatile, complementing sweet and savory recipes alike while still being a simple classic eaten on bagels or crackers and contains no gums or stabilizers. Our Queso Tencho will remind you of Queso Fresco, but with a buttery flavor and it melts! Our Triple Crème brie is dreamy, creamy and luscious. Rose Veal. Springdale Farm Veal is considered “Red” or “Rose” because of its deep pink color. This color is developed through feeding the calves a diet of rich Jersey milk, hay and pasture in season. Calves are raised for 5 to 6 months or about 350 lbs. Rose Veal is flavorful yet still much milder than beef. It is also very tender but has more texture than commercial veal. Beef. Jerseys produce superb beef. Since Jerseys produce meat that is distinctly rich and flavorful. Expect the fat to be a yellow color, much like the rich yellow hue of Jersey milk. Springdale Farm beef is raised on grass, silage and a little grain. This summer we're taking our meat and hitting the road.
