Just want to take a moment to celebrate the subtle deliciousness and versatility that is Ricotta Salata.
Our gardens here in Maine have hit their stride and are overflowing with beautiful produce and herbs and this cheese is a perfect accompaniment!
It pairs beautifully with spinach, arugula, eggplant, tomatoes, summer squashes, roasted beets, citrus fruits, melon and nuts.
Add a savory depth to vegetable-focused meals by grating it on roasted or grilled vegetables and fall soups. Perfect on pasta dishes with summer squash and eggplant or crumbled over fall salads.

Cracking into one from the vaults this 25 YEAR OLD Quebec cheddar has aged beautifully!!!
Firm yet creamy, with a multitude of tiny protein crystals that give it some crunch. The salt is perfect, and the acidity is bright but not biting. It is robust, ceamy and just a treat!
