Hot carcass weight is the weight of a carcass prior to chilling. A beef carcass consists of 70 to 75 percent water. As the carcass chills and ages, water will be lost through evaporation. In just the first 24 hours a carcass can lose up to 2 to 5 percent of its initial weight.

Hello everyone, Ally and I finally got around to making a page for Hillsdale County Meats! Here we will share what we are working on, new updates, closings, beef appointment openings, help wanted and etc.

But with that we would like to give a huge thank you to Grover Dietrich for allowing us to purchase Hillsdale County Meats and everything he has done to get us where we are now. This was his baby for the past 13 years and he tells us every day that we better not turn his Cadillac into a Pinto! And as you can see he is ready to relax!
