Freeze-drying doesn't dry your product. It skips a step.
Under vacuum, the ice in a frozen product turns straight to v***r without ever melting. No liquid phase means the structure stays exactly where it was. That's why a freeze-dried strawberry still looks like a strawberry, and a raw diet rehydrates into something recognizable.
Air drying and baking pull water out as liquid, and the structure collapses on the way.
