Hatch Burrito Co. We’re a food truck out of Walker, Mn bringing vibrant Colorado flavors to the Leech Lake area and surrounding towns.

We focus on quality ingredients, scratch-made salsas and marinades for a fresh, fulfilling culinary experience Chris and Zoe here, a Colorado native and a corn-fed Minnesotan! Chris grew up with Green Chili running through his veins, and Zoe lived in Denver for ten years and formed a healthy addiction for the Colorado staple. Upon moving to the north woods of Minnesota, we missed some of our south

west favorites, and decided it would become our lives' mission to share it with our new friends and neighbors. We are using fresh ingredients, and authentic recipes to create a vibrant menu full of flavor, and a variety of spice. When we first started the trailer, it was a bit of a tough sell. Not many people here in Minnesota knew what Colorado Green Chili was. But once people tried it, they caught on—and now it’s a huge hit!

In Colorado, green chili isn’t just a sauce—it’s a way of life. Every family has its own recipe, and everyone believes theirs is the best.

Ours brings together Colorado tradition and New Mexico Hatch chiles to create something truly special.

What a fun night last Friday at the Lakeside Concert Series in Hackensack, and thanks Jerry Eklund Photography for the awesome photo!!

We’re usually the ones serving food instead of getting to kick back and enjoy ourselves, so it was pretty awesome getting to actually enjoy the concert! This is only the second one we’ve gotten to attend as spectators!!
