Veraison is nearly behind us. Harvest is getting closer.

Over the past few weeks, these berries have softened, changed color, accumulated sugar, and continued developing the flavors and phenolics we’re looking for.

Now comes the waiting... tasting, watching, and letting the vineyard tell us when it’s ready.

Brix tells us something. But so does flavor. So do the phenolics. And ultimately, the vineyard has to bring all of those things together.

That deep purple doesn’t happen by accident.

As the berries move through veraison, sunlight helps drive the development of anthocyanins—the compounds responsible for that beautiful color.

For Cabernet and Syrah, plenty of sunshine on the clusters now can mean plenty of color in the glass later.

Part 3 of 3 | Vineyard Update with Billo

Every grape follows a remarkable journey.

Right now, the berries are nearing the end of Stage One, when they grow rapidly in size. Soon they'll enter lag phase, where growth slows and the vine shifts its energy toward developing viable seeds inside each berry.

Only after that comes one of the most anticipated moments of the season: veraison—when the grapes begin changing color and the final ripening process begins.

We'll be back in about a month to show you that transformation. Until then, the vineyard keeps quietly doing its work.
