This is a question we get all the time during winery tours—and for good reason.

That “egg” is actually a concrete fermentation vessel. Its unique shape naturally keeps the wine moving during fermentation, helping circulate the lees and build texture and complexity without the need for manual stirring.

Different vessels influence wine in different ways, and our winemaking team carefully chooses the one that best suits each wine and the style they’re looking to create.

Our Winemaker’s Table experience has been refreshed with a new lineup of chef-crafted dishes from our culinary partner, Hattaway’s on Alder, each thoughtfully paired with our estate wines.

From a crisp Green Goddess Salad alongside our Sauvignon Blanc to Bourbon Street Pork Noodles paired with Cabernet Sauvignon, every course is designed to highlight the character of both the food and the wine. And of course, no meal is complete without dessert—a rich Bread Pudding paired with our Merlot.

Set against vineyard views from our tasting room, the Winemaker’s Table is an intimate dining experience where exceptional food, estate wines, and warm hospitality come together around one table.

As Winemaker Jean-François Pellet explains, blending is one of the most important—and rewarding—steps in crafting our Bordeaux-style wines.

Why blend wines instead of bottling each variety on its own?

For us, it’s about creating something that’s greater than the sum of its parts.

Each varietal brings its own personality to the glass—Cabernet Sauvignon offers structure, Merlot adds richness, Cabernet Franc contributes aromatics, Petit Verdot brings depth, and Malbec lends color and fruit.

When thoughtfully blended, they don’t compete—they complement one another, creating a wine with greater balance, complexity, and harmony than any single variety could achieve alone.

When people ask us, “When’s the best time to visit the winery?”

Katie’s answer is almost always the same: harvest.

For a few exciting weeks each year, the winery comes alive. Grapes arrive from the vineyard, the cellar is buzzing with activity, and you get a front-row seat to the beginning of a new vintage.

Our Harvest Winery Tour takes you beyond the tasting room, with a guided visit through the winery while harvest is in full swing. It’s a rare opportunity to see the journey from grape to glass as it’s happening.
