Merry Christmas from Underground Processing.

This season, we pause to remember the true reason for Christmas: the birth of Jesus Christ and the hope, humility, and grace He brought into the world.

As we reflect on the season, we want to thank our farmers, customers, and community for trusting us with your animals and your business. We are grateful for the opportunity to serve you and for the support you have shown us throughout the year.

As we head into the new year, we also want to share an important update. Beginning in January, Underground Processing will be opening a limited number of custom beef processing slots. Customers interested in beef processing are encouraged to contact us directly to confirm eligibility and scheduling.

Please note our holiday schedule.
We will be closed December 24 through December 29 so our team can spend time with their families.
We will close early on December 31 and will be closed on January 1.

📢 Big News from Underground Processing

We’ve made major improvements in our processing, and customers are already seeing the difference.

🥓 Bacon turnaround time is now 3–5 weeks depending on the cure, down from as long as 12 weeks in the past.

🐖 We’ve increased our capacity which means faster turnaround and the ability to process more animals.

Expansion News & Introducing Fully Cooked Items

We are excited to share some important updates from Underground Processing. Big changes are underway that will expand what we can do for you and introduce new opportunities just in time for the holiday season.

Nearly $1,000,000 has been invested into our facility, including over $300,000 for two new smokers and equipment that will increase our curing and smoking capacity from 300 pounds of meat two times per week to up to 4,800 pounds five days per week.

With this additional capacity, we will be offering summer sausages, meat sticks, jerkies, and other smoked products. At this time, these items will be available under custom exempt, which means for your personal use, your household, and non paying guests or employees. Hunters interested in summer sausages, meat sticks, or jerky are encouraged to begin booking now. (We do not process deer but can accept deer meat from other processors.)

We also continue to offer USDA inspected smoked turkey legs and whole cured and smoked turkeys. Get your orders in early so you are ready for Thanksgiving sales.

The new smokers will arrive mid October with staff training scheduled immediately after. During that training week we will be offering discounts on summer sausages and other new products.

We have also added 1,300 square feet dedicated to curing, smoking, and red meat processing, along with new freezer and cold storage capacity coming September 23. Once the full expansion is complete between mid October and early November, you will be able to pick up smoked products at the same time as your fresh cuts.

🔹 Why this role matters
You are the final checkpoint before each order receives the USDA mark of inspection. Your accuracy keeps every cut perfect for our customers.

🔹 What you’ll do
• Move product between coolers, freezers, and labeling tables
• Verify cut names, weights on each label
• Enter label details and print USDA approved labels
• Count, sort, and inventory finished cuts and custom items
• Keep the work area spotless and records complete

🔹 What you’ll bring
• Ability to learn meat cuts in days, not weeks
• Basic typing skills and comfort with numbers
• Sharp attention to detail; this is a quality control job
• Strength to lift 50 lbs.
• Team mindset, ready to jump in wherever needed

🔹 Schedule & pay
• Full time, Monday to Friday, day shift
• Paid every two weeks; rate based on experience and willingness to learn
