Mushroom and Spinach Stuffed Chicken Breast
Ingredients:
4 boneless, skinless chicken breasts
Salt and black pepper to taste
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 tablespoon olive oil
8 ounces mushrooms, finely chopped
2 cups fresh spinach, chopped
3/4 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 cup chicken broth
2 tablespoons butter
Fresh parsley for garnish
Instructions:
1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare Chicken Breasts:
Lay the chicken breasts flat on a cutting board. Season both sides with salt, black pepper, garlic powder, onion powder, and dried thyme.
3. Create a Pocket:
Using a sharp knife, carefully slice a pocket into each chicken breast without cutting all the way through.
4. Sauté Mushrooms and Spinach:
In a skillet, heat olive oil over medium heat. Add chopped mushrooms and cook until they release their moisture. Add chopped spinach and cook until wilted. Remove from heat.
5. Prepare Stuffing:
Combine the sautéed mushrooms and spinach with shredded mozzarella and grated Parmesan cheese. Mix well.
6. Stuff Chicken:
Stuff each chicken breast pocket with the mushroom and spinach mixture.
7. Secure with Toothpicks:
Secure the chicken breasts with toothpicks to hold the stuffing inside.
8. Sear Chicken:
In an oven-safe skillet, melt butter over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until they get a golden-brown crust.
9. Add Chicken Broth:
Pour chicken broth into the skillet.
10. Bake:
- Transfer the skillet to the preheated oven. Bake for about 20-25 minutes or until the chicken is cooked through.
11. Garnish:
- Garnish with fresh parsley before serving.
12. Serve:
- Serve the Mushroom and Spinach Stuffed Chicken Breast with your favorite side dishes, such as roasted vegetables or mashed potatoes.
