Every January we're bombarded with advice about what to eat, what to eat less of.

But food decisions don’t happen in a vacuum. They shape land, livelihoods, ecosystems, and communities in ways we don’t see at the grocery store.

Eaters take multiple paths in search of better health and a healthier planet. And we keep coming back this: How food is produced matters. Who we support matters. And small, everyday choices add up over time.

It isn’t about doing everything the same way or making perfect choices. It’s about staying curious, asking better questions, and paying attention to the systems we’re part of. We’re all learning as we go.

This is what winter looks like at the ranch.

These months are what we call our “dormant season”. Grass growth slows to a halt, days are shorter, and the land asks us to shift how we care for both the soil and our animals.

Even though the grass isn’t growing, our cattle are still an important part of the system this time of year. With limited fresh forage available, we rely on locally grown hay to meet their nutritional needs.

Hay isn’t just feed; it’s how we bridge the gap when grass quality dips due to cold temperatures and slower growth. It’s also a source of nutrients for the soil — the cattle eat what they need, and what they leave behind eventually feeds the soil microbes.

Winter is also a season of learning. We experiment, observe, and refine—looking for ways to reduce wintering costs, improve efficiency, and keep more carbon cycling back into the soil. Every decision is made with long-term soil health in mind.

As temperatures drop, our pasture-raised hogs transition back into the barn. This keeps them protected from the elements while still allowing them to express natural behaviors and remain part of our regenerative system.

The winter season may look quieter, but the work doesn’t stop. It’s a time of stewardship, preparation, and care—setting the foundation for the growing season ahead.

We believe in having food stay as local as possible – which is a big reason why we intentionally choose to only offer delivery and pick-up options in the Portland and Seattle area.

We have a variety of 100% grass-fed beef bundles, pasture-raised pork and chicken options. The way we raise our animals not only makes for nutrient dense, delicious meat, but helps restore our soil.

Hi, it’s Cory. I’m the fourth-generation rancher behind Carman Ranch.

Some of you have been with us for years.
Some of you are customers, neighbors, ranchers, or farmers.
Some of you just wandered in.

I wanted to reintroduce myself, our ranch, and what we’re here to do.

Carman Ranch sits in the Wallowa Valley in northeast Oregon. My great-grandfather came to this valley in 1913 and started raising cattle here.  The generations since all share a love for this place. I get to learn from their mistakes, and from my own.

I left for a while to study environmental policy and work in D.C., but eventually realized the most meaningful impact I could make was by taking care of land. Over time, I learned that, managed well, cattle could actually improve the health of the land.

I raised my kids here, so I get to look at soil tests, spreadsheets and teenager Snapchat messages in the same afternoon.

We’re continually evolving, but here’s a bit about what we’re up to:

We produce 100% grass-fed beef. (And a few pastured pigs too!) We use regenerative grazing practices to raise our animals, which means we can give back to the land, give our animals a content and thriving life, and grow exceptionally healthy and delicious beef.

We also have incredible partner producers, so we can serve more people in the Pacific Northwest region and offer more than just beef (like chicken options!)

We use the whole animal, so we sell all parts of the cow (not just steaks), and we try to make your life easier by creating convenient cuts like shaved steak and hot dogs and portable snacks like our clean beef sticks and jerky.

We sell bulk beef because it's the best value.

We stay regional on purpose. We call the PNW our home, and serve the Portland and Seattle area with local delivery and pick-up options.

Whether you’ve been supporting us here for years or just recently found us, we’re so grateful you’re here. We’re excited to be your go-to high-quality meat source here in the PNW and look forward to sharing our plans and progress with you.

🌲🐄 Forest shade + greener pastures
This time of year, our cows are in the timber. The forest gives them shade, and the grass stays green longer under the trees — a welcome relief during late summer heat.

🐖🌱 Pigs as land stewards
Swipe to see something less picturesque, but just as important: how pigs help us fight invasive Medusahead rye. This grass forms a thick thatch that chokes out everything else.

Instead of spraying chemicals, we bring in the pigs. They root up the thatch, clearing space for us to seed deep-rooted plants like alfalfa. 🌿 Over time, more biology returns to the soil, less Medusahead comes back, and healthier plants take hold.

✨ The result? Stronger soil, thriving ecosystems, and — as a bonus — delicious pasture-raised pork.

This is the seasonal rhythm at Carman Ranch: working with animals and landscapes together, building healthier land year after year.

Congratulations, Daisy! 🌼🎓

We’re proud to celebrate Daisy Mendez, a Wallowa High School graduate and a beloved part of the Carman Ranch community. Daisy has grown up alongside us—her father has been part of the ranch team for 20 years, and Daisy has spent many days lending a hand and learning what it means to work hard and follow your passions.

Her favorite high school memory? A life-changing trip to Costa Rica with her Rotary Club. Next up: college, where she plans to study natural resources and continue her journey of caring for the land.
