Walnut Springs Creamery (WSC) was established in 2016 by Jason and Julie Swenson. Both natives of southwest Virginia, Jason and Julie relocated to Walnut Springs, Texas after Julie accepted a position as a veterinarian at Fossil Rim Wildlife Center. After trying numerous careers including wildlife science, criminal law and catering Jason decided to merge two of his passions into one. Buying a smal
l farm outside of Walnut Springs, Texas they began building their registered Nubian dairy goat herd with 4 well seasoned milkers: Cam, Vicki, Bea and Dora. The herd has since grown to 24 milkers and 2 retirees. An arid adapted breed, Nubian goats were the perfect choice for a Texas dairy. In addition, their milk is the perfect combination of volume and fat for the production of cajeta. Not to mention how cute their ears are (see photos!). Cajeta, a type of dulce de leche produced from goat milk rather than cow's milk, is a decadent caramel sauce that can be utilized in many types of desserts (our personal favorite is just eating off a spoon!) Artisanal cajeta was born in Celaya, Mexico where it is still produced in the traditional copper pot method. WSC cajeta remains true to this production method. In addition to the original, cajeta salada, WSC is also producing several types of cajeta envinada which are liquor infused recipes.
