Why Does Honey Crystallize?
Honey hardens by formation of dextrose-hydrate crystals.
Glucose molecules clump together. When enough glucose molecules bind together, they form solid crystals in the honey. Some varieties containing more glucose (like alfalfa, dandelion and clover) tend to multiply rapidly. So what's left in the jar after a while isn't different, just honey in semi-solid or solid form.
It can be reliquefied by a warm water bath. Do not microwave and use a glass jar.
Honey stored above 50 degrees crystallizes less.
